Recipe - 16 Bean Soup
1 16-ounce bag of Nutstop 16 bean soup mix
1 onion diced
3 cloves garlic minced
3-4 carrots, sliced
3 ribs celery, chopped
2-3 bay leaves
1 tablespoon olive oil (can be eliminated)
7 1/2 cups water or veggie, or chicken stock
½ teaspoon cayenne (to your liking or leave out)
Salt & Pepper to taste.
Instructions:
Sort and rinse beans. Soaking is not necessary.
Heat instant pot on “saute” function. Once hot, add carrots, celery and onions and bay leaves. Saute until veggies are coated with olive oil. No need to saute until softened. Add garlic and cayenne (if using cayenne)
Pour in water or broth. Turn “saute” function off. Turn “Manual” setting on and set the time for 50 minutes. Be sure lid is in the sealed position.
NOTES:
You can use a slow cooker for this recipe. Put all ingredients in the pot. (You don’t have to saute the veggies if you don’t want to.) Cook on high for approximately six hours or until beans are tender.
The soup will thicken once cooled. If needed you can add a little water when reheating.

Jill made your bean soup as the weather was rainy and cooling down. It was wonderful as always. This time I added some kale to the soup, I did that when I removed the lid and just stirred it in. Just let it wilt and then served.

I have a brand new InstaPot that I have been too timid to use! but I went to NutStop and ordered these beans and I'm going to be brave and make this soup because it sounds so good! Hi Debra -- thanks so much for writing! Don't be afraid of your Instant Pot. You will come to rely on it for so many cooking tasks. Just follow my recipe and you'll do fine. I'd give the cooking time on "Manual" 50 minutes. The 43 minutes left the larger beans just a little bit al dente. Also -- check out my other instant pot recipes. They are equally easy to follow. I was afraid of my instant pot also until I finally got brave. Now I use it all the time! I love my instant pot!
I just got a bag of beans fromCostco. It is Heirloom Beans and Peas. Recipes for soup are on the bag for other things too. I think that huge bag will last a year. Plus it said there were lentils too.
Sounds great! Hope they are delicious. I'll need to look on line to see if they carry them. We get Costco home delivery.
Nice Jill. I made a soup mix from Bob Red's Mill and it had grains in it which I didn't like. This looks FABULOUS! Gonna try it in the crock.
Someone else had written in about a package of 15 bean soup that had grains in it. Sounds dreadful. This is all beans and they are wonderful. Clean, fresh, no dirt. Good quality! The crock pot is a great way -- about 6 hours should do it.

Soup looks so good! What do soybeans look like? I have to avoid because of breast cancer. I can remove those from the mix.
Actually I dont think they are soy beans and I should check with company about it. However the bean I was referring to is round, smooth, and green, sort of like a pea. The soup was fab!
This would still have been vegan if made with vegetable stock, but it would have been harder to control the saltiness of the soup, since veggie stock would probably have been fairly high in sodium.
My mother-in-law used to make a homemade white bean soup which she called depression soup. Just beans and some onion and butter. Not sure all what was in it.
Jill do you need a good laugh? I made the bean soup again and it smelled wonderful. I started searching for the ham bone to pull off the meat. I forgot to put the ham bone in so I put it in and cook the soup for another 15 minutes. Husband wanted to know what the problem was had to admit what happened. Soup was still wonderful!
Sounds just like something I'd do. My mother when she was first married had a small group of friends over for dinner. She brought all the food to the table BUT forgot the main course roast. She forgot to cook it. Haha
