I'm glad you didn't use eggs. I'm from poland and the traditional dough is made with only water flour and a Little bit of salt. Pierogi is honestly one of my favorite dishes! The pierogi that you made (potatoe and cheese) are the most common there called pierogi Ruskie however There not my favorite .My personal favoriteare pierogi z grzybami (pierogi with mushrooms)or pierogi z mięsem (pierogi with meat) they are delicous.
