My parents immigrated from Ukraine to Montreal, Quebec, Canada in 1951and growing up, I went to Ukrainian school on Saturday's and learned how to speak, read and write Ukrainian. I did Ukrainian dancing and sang in a very, very big Ukrainian choir and I still have my Ukrainian costume. I have made Vareniki in the past, but my mother's were the absolute best shaped Vareniki and tasted amazing! I miss them and her alot! Thanks again! Valentina

Potato Vareniki are my absolute favorite since I was a child!! I used to help my grandma and my mom a lot with these when I was younger. Honestly, I miss all the homemade Russian food as I'm no longer living at home anymore. Thank you so much for the video; now I feel encouraged to reconnect with my cultural (and culinary) heritage. I’ve been trying to nail down my Bobchi’s pierogis for all of my adult life-yours is the closest I’ve ever gotten. I think it’s your topping! I’ve made all kinds of delicious pierogi over the years, but have always been trying to recreate hers. She always did the curly seams with me too! I enjoy your videos & instruction.
i made these for lunch and they’re SO GOOD! i’ve never tried pierogi but i can tell you that these are irresistible. they did take me about an hour to make, but they’re worth it in the end :) thanks natasha for this recipe!
YESSS!!! Yummm. My cousins and I used to love pierogis. We bought the frozen kind though because we’re middle eastern and it’s not something our family knew how to make. But we would pan sear them and then add water so they’d steam the rest of the way. I love this traditional recipe and I’d love to give this a try. That dough looked so perfect. My parents came over for dinner yesterday and I wanted something different than plain old potatoes. We were having a roasted chicken, so I wanted something to liven things up a little. I never had these before and had everything needed to make them. Pierogies are now my favorite way to have potatoes. My 82-year-old father devoured them. My polish stepmother loved them too, so I (we) nailed it. I added some chives to the potato mixture because I know my father likes potatoes that way. And with bacon, butter, and sour cream on top. There wasn't any leftover. These are easy to make and worth the little effort needed. Delicious!!! Thanks for a great recipe! EDIT: I hope these are in the cookbook so I have a hard copy of the recipe.

Hello again. I just subscribed recently and I am going through all your wonderful videos whenever I have the free time. I make a good pot of coffee and I go through one video at a time. I am commenting on this particular video because it reminds me of my wonderful grandmother. My grandmother was born in Warsaw Poland, and escaped the Nazis and communism. My grandmother lived with us until the day she passed away. It was the greatest time of my life. These potato pierogi brings back so many great memories. I can still picture my grandmother in her clean apron, her hair tied back, and my grandmother always wore beautiful earrings every day, even when she was cooking. My grandmother made every version of these. The potato, and also the sauerkraut. You also use the best ingredients and you don’t substitute. My grandmother used everything real from the butter, to the best salt. No substitutes whatsoever. It was truly a labor of love and I think about her all the time. I know I will never get these wonderful dishes again, but I do have all the memories. I am savoring all your videos and they truly give me great pleasure. I left a comment when I first saw one of your videos. I had to comment on that gigantic pepper mill, and of course the leaf blower. It makes your videos fun to watch. We all need laughter and we all need to smile now and then, your videos provide that. I was compelled to write this. I am going to attempt many of your wonderful recipes. My family loves these! My grandmother taught my mom, my mom taught my wife and me. This recipe looks delicious! We make ours with farmer’s cheese in the potatoes. We also make our own sauerkraut (kapusta) and use that in place of the potatoes. Of course, butter and onions on top once they are cooked. I grew up on vareniki too! Except instead of potato we brought a pot of buttermilk to a boil. Seive it off mix the filling with an egg and salt n pepper an that's our filling. To top it with we fry up chopped bacon aswell and add cream, n salt. As a side we have pork sausage! Mmm so good! Definitely excited to try your way soon!
I make these all the time for Christmas. I got my recipe from a co worker who is polish. I boil mines then sauté them for a little crispiness. I also add farmers cheese, parm cheese, roasted garlic and roasted onion to my potato mixture. Building on the flavors makes these great. You can also use chive cream cheese...

Hey girl, If you want to have "Crispy" pierogi, you can't skip the frying step. Also, I put the bacon bits in the stuffing. I love everything else about it.
My Hungarian Canadian ex-husband loved these. But he fried his in butter and oil after they cooled from the boiling; therefore, his were crisp and browned. He served with pan fried sausage slices and onion, as well as sour cream. I had had the boiled variety at international food festivals in Houston, TX. I even bought the cookbook they sold, just for the pierogi recipe! I made them a few times but I had trouble with them coming apart--thank you so much for the recipe and tips to prevent that happening Natasha. FYI: putting butter on the bacon was a Victorian expression for being excessive.

I LOVE pierogi but was always too afraid to try to make them because it seemed "too complicated".... You make it look soooooo easy!! I am definitely going to try this... maybe using cheddar cheese instead.... and I never thought about adding bacon!!!! OH YUMMMMMMM!!!!! 💥💖💖💖💥
You should totally give them a try. There are many different fillings you can use. People mix cottage cheese with potatoes or use cabbage inside. Bacon is a great topping and you can eat even sautee diced onion as well.👍🏻

Hi Natasha, I had a problem with rolling them out to the thickness you rolled out. So mine were a bit on the thick side. I think I may have added too much flour. One thing though, I did not have that wonderful scoop you had, so I used a large piping back with a large round tip to make it faster. Thank you again for all the lovely recipes and videos that you take time to share with us, greatly appreciated!!!

I just made these! The recipe is very easy to follow and so good. There's nothing like homemade vareniki! Here is San Diego, our local Russian store charges $4.99 lb for these which is unreasonably expensive!

looks good fresh and with the martzerella cheese. I usually pan fry frozen perogies on low heat. they usually turn out crispy but your ingredients are a lot fresher by the looks of it.
Wow you make making peirogus look so fast and easy! I use a family recipe and it takes me a whole day to make each one. You gave me so many ideas to make them a lot faster! And mmm bacon! Will be trying this next time I make them!

i am from Georgia (the country) and my granma used to do them from Khinkali dough's leftover (pork and beef stuffed dumplings) it reminds me of that sweet times, i will try this with myself now
I have eaten pyrogies since childhood. Including in Russia and the Ukraine. I have eaten pyrogies made by my relatives all different tweeks of their recipes. I have eaten pyrogies in Canada and various states of America . The BEST I ever tasted were surprisingly in Seoul at a Russian restaurant called Troika in Itaewon district.
After boiling, my Mom would deep fat fry ours...both the meat and potato ones, and the cheese ones which she added a lil sugar and 1 egg yolk to...sometimes the best foods are the ones we remember our family lovingly making...blessings to you and all your family!
Spring is just around the corner. Have invited my son and daughter-in law for Easter. We'll make 2 large batches of vareniki, and Lapsha (egg noodles) for him to take home to his freezer. We boil the vareniki before freezing, lightly covering them with vegetable oil to prevent sticking. They go from freezer to frying pan for thawing, then browning... I'm from the south of Brazil and our region received many Polish and Eastern European immigrants in the past, so pierogi is kind of incorporated in our cuisine... loved to learn this recipe (as we usually buy them already cooked in street markets or frozen to boil at home), and I'm gonna try it with bacon and butter next time, and it's the first time I see adding sour cream... (here many people like to add tomato sauce on top, not sure if people also do that in Europe or that means the preparation was adapted over here)

Being Canadian who is 2nd generation Ukrainian and Polish, we add yellow Cheddar cheese. We also fry onions along with the bacon. Overall nice job.

In Poland we add fried onion to the potato filling. Also, we boil pierogi for two minutes from the time when they start floating. I like your recipe very much .

I LOVE pierogi but was always too afraid to try to make them because it seemed "too complicated".... You make it look soooooo easy!! I am definitely going to try this... maybe using cheddar cheese instead.... and I never thought about adding bacon!!!! OH YUMMMMMMM!!!!! 💥💖💖💖💥
You should totally give them a try. There are many different fillings you can use. People mix cottage cheese with potatoes or use cabbage inside. Bacon is a great topping and you can eat even sautee diced onion as well.👍🏻

Hi Natasha, I had a problem with rolling them out to the thickness you rolled out. So mine were a bit on the thick side. I think I may have added too much flour. One thing though, I did not have that wonderful scoop you had, so I used a large piping back with a large round tip to make it faster. Thank you again for all the lovely recipes and videos that you take time to share with us, greatly appreciated!!!

I just made these! The recipe is very easy to follow and so good. There's nothing like homemade vareniki! Here is San Diego, our local Russian store charges $4.99 lb for these which is unreasonably expensive!

looks good fresh and with the martzerella cheese. I usually pan fry frozen perogies on low heat. they usually turn out crispy but your ingredients are a lot fresher by the looks of it.

i am from Georgia (the country) and my granma used to do them from Khinkali dough's leftover (pork and beef stuffed dumplings) it reminds me of that sweet times, i will try this with myself now

I have eaten pyrogies since childhood. Including in Russia and the Ukraine. I have eaten pyrogies made by my relatives all different tweeks of their recipes. I have eaten pyrogies in Canada and various states of America . The BEST I ever tasted were surprisingly in Seoul at a Russian restaurant called Troika in Itaewon district.

After boiling, my Mom would deep fat fry ours...both the meat and potato ones, and the cheese ones which she added a lil sugar and 1 egg yolk to...sometimes the best foods are the ones we remember our family lovingly making...blessings to you and all your family!

Spring is just around the corner. Have invited my son and daughter-in law for Easter. We'll make 2 large batches of vareniki, and Lapsha (egg noodles) for him to take home to his freezer. We boil the vareniki before freezing, lightly covering them with vegetable oil to prevent sticking. They go from freezer to frying pan for thawing, then browning... My son likes Potato, cheddar, diced onion and bacon in the filling..

I'm from the south of Brazil and our region received many Polish and Eastern European immigrants in the past, so pierogi is kind of incorporated in our cuisine... loved to learn this recipe (as we usually buy them already cooked in street markets or frozen to boil at home), and I'm gonna try it with bacon and butter next time, and it's the first time I see adding sour cream... (here many people like to add tomato sauce on top, not sure if people also do that in Europe or that means the preparation was adapted over here)
