Sweet Coconut Pandan Buttercake

  • Sweet coconut
    80 gram palm sugar | gula merah
    3 tbsp water | 45 ml air
    1 cup fresh shredded coconut | 100 gr kelapa parut
    Pandan leaf
    1 tbsp all purpose flour | 8 gr tepung gandum
    Pandan buttercake
    200 gram salted butter | mentega bergaram
    1/2 cup sugar | 130 gr gula pasir
    3 eggs | telur
    1 and 1/2 cup flour | 240 gr tepung gandum
    1/4 tsp baking powder
    1/4 tsp baking soda
    1/4 cup thick coconut milk | 60 ml santan pekat
    1/2 tsp Pandan essens
    1/2 tsp green food coloring
    Using 7 inch baking pan | 18 X 18 cm
    Bake in preheated 160’C for 50 minutes

    Watched this video last night b4 bed.. This morning,i woke up and baked this cake. not one but two of 8" baking tray. I did multiply this recipe to 2.5 time. Thanks jay kuche 4 sharing . U came at the right time when i almost ran out of idea what to bake !

    Hi Jay..may i know what brand of santan & pandan essence you used? Bcs I've tried kijang & star band..but none of them are suits with my taste 😬

      For coconut milk always use kara and pandan emulco using myflavour brand. Yes, the star brand is quite strong. Maybe you can reduce the amount if use star brand💜

      You may use 50 ml of pandan juice and reduce the coconut milk to 30ml💜

    Can I use tin loaf? I've 8inch square , would this b too big n too thin to bake?

      The cake will be a little thin, but I'm sure it'll be fine. Do not forget to reduce the time of baking 💜

    What's pandan leaf & essence means? Which plant?

      Pandan leaves is tropical plant, it is known as 'fragrant plant' because of its unique, sweet aroma. Pandan essence is an extrashopct made from pandan leaves. You can get a readymade pandan essence from bakery shop.
