The cake smells really good, Question 1) when is the best time to take the cake? 1 day or 2 days later ? (As butter cake is best to consume after 2-3 days). 2) It tastes a bit salty to me after out from oven, will try the taste in next 1-2 days. Can I substitute all butter to unsalted butter ? It just took me 75min baking time. Maybe I use almost boiling hot water. No major crack on surface, just some fine lines. Many thanks for the recipe.
You may replace with 1/2 tsp of lemon juice. But with lemon juice the meringue is less stable as compared to cream of tartar. You need to prepare the pandan batter first, then wash the equipment thoroughly before whisking the egg whites.
I tried the recipe today. Smelt really good whilst it was baking. However, my cake “exploded” in the middle and baked by 1 hour. The water bath had also dried up, but the cake tasted ok but found it a bit dry. My oven has a fan - could that be the cause of the cake baking too quickly?
Maybe because my oven is an old oven and heats up very fast... anyway thanks for your responses. The other thing is my Pandan leave colour was very light even though I used more Pandan leaves! I wonder why!
I find this to be undercooked at the bottom especially - everytime I make it. I even baked it close to an hour 45 minutes. I always end up taking it out from the water bath and baking it on its own for maybe 5-10 minutes
Different oven different heat efficiency, material & thickness of mould and which position of level you use in given all affecting the baking time, recipe is just a reference, need to adjust according to your oven, setup & mould material.

For me it is best served fresh. You may use unsalted butter.

How long do I need to preheat the oven and the should water be cold or hot? Tq
Put water (room temp.) in a tray and preheat together with oven to 160°C, it takes about 10-15 mins.

Add a tray of water in the oven, about 3 cups, for 1.5 hours of baking. Oven with fan is ok, my oven is convection oven too.

I bake at 160°C/320°F for 1 hour 30 minutes for this recipe.
