INCORRECT!!! Fat makes you fat! Sugar and starches can be burned off relatively quickly throughout the day. Though it's not smart to overdo this either. Overindulgence is what mostly makes you fat. Eat in moderation and be smart about it.
The fat can be rendered down, if desired, and used to brown the ribs. All depends on the amount of fat you want. You can also freeze the fat and use it later on as seasoning in things such a Pork & Beans, Green Beans etc...
