    You are one of the few chefs who have the sensible idea to skin the fillet first. Help the curing flavour to penetrate both sides.

    3 days or 36hrs? Nice idea though, the darker layer on the outside is perfect with the salmon colour inside

    Im not a big fish fan but that looks delicious. Also thanks for the advice i always struggle with the skin.
