@@rrawrlolzzz4726 Try letting your liquid ingredients (eggs, milk) come to room temperature first next time. That should help with keeping the coconut oil/butter from solidifying. That definitely is more difficult in the winter though when kitchens and general room temperature are lower.

I made two. Our batter was thick, the one I sent over to friends was thinner. I'm not entirely sure how theirs turned out, but we enjoyed this cake. It had a good amount of lemon in it. The texture was a little crumbly, but soft. I'll probably make it again.
Yes you can. Most of my coconut flour recipes recommend coconut oil. However, with lemon flavors I really like the combination with olive oil. But coconut oil can be substituted for sure

This is the recommended amount for this cake. Coconut flour can make fairly dense cake so we need more baking powder to raise it. I have never noticed any bitterness. They lemon may help neutralize it

I was looking for a keto alternate cake and this was perfect. Very moist I used butter inside of olive oil. For the glaze I used Xylitol and cornflour as a low calorie version.
Yes it works with either of the other oils too. I just like the combination of olive oil and lemon flavors, but feel free to use coconut oil or avocado oil, or even melted butter.

No unfortunately not. Coconut flour is the dried, ground pulp leftover from coconut milk. It is different from just finely shredded coconut meat because a lot of the fat is extracted already
No I don't think that will work. Coconut flour is not just finer ground shredded coconut. It's the extracted coconut pulp from coconut milk production. So it has less oils and moisture
So glad you like it. While I haven't tested it out, I think the best vegan alternative would be aquafaba - the whipped liquid from chickpeas. I don't think flax egg alternative would work very well here
Thats a great idea. I have a coconut flour blueberry muffin recipe with ricotta (leelalicious.com/coconut-flour-blueberry-muffins/) So I think it should work similarly in this cake. You could replace some or all of the almond milk with ricotta or mascarpone
@@Leelalicious l grow the plant on my backyard. I take the leaves and put them in a tupperware container then keep it in a fridge until the leaves get dry. Then l grind them to make stevia powder. The problem is the color of the leaves is still there. But l don't mind as it gives soft green to my cake.

Yes to both. I did almond milk to keep it dairy free but any milk will be fine. Same with coconut oil. It's my preferred oil when baking with coconut flour, but for lemon cake I like the pairing with olive oil. But any oil, even melted butter will work

I have not tried replacing eggs in this specific recipe but here is my experience from other coconut flour recipes. I am thinking that aquafaba (the whipped chickpea liquid) might work best for making a light and fluffy egg free coconut flour cake. In general with coconut flour I find that flax egg works better for cookie or brownie recipes. Cake and muffins can be too dense. Or if you try it I would suggest to soak the flax meal in the liquid from the cake ingredients (no extra water).
I have only tested this recipe with coconut flour. Using oat flour you'll probably need at least 1.5 cups of that, maybe even 2 cups. But I am not sure if any other adjustments will be necessary. A better option may be to look up a lemon oat flour recipe.
I am pretty sure any real vanilla that is just vanilla beans and alcohol would be considered keto. Alcohol levels usually bake off in the oven's heat leaving only the flavor. Also, it's a tiny amount dividing 1 teaspoon over all the slices.

Using a little less flour or adding a little extra liquid next time should fix it. Also be sure not to over bake it. In general though recipes with mainly coconut flour are on the grainer and drier side

What did the batter look like? At times my batter thickens up more too (I trace it back to different brands/batches of coconut flour). In that case I try to adjust the liquids to achieve a pourable batter consistency before baking, which usually ensures a moist (not crumbly) finished cake too.

terrible result.. i followed the recipe exactly step by step and tasted sooooo bitter and fell apart taste horrible.
