    Hi there. I suck at baking. Nothing I bake is edible. However, I made this cake several times I turned out excellent each time. I took the cake to families and friends, and. I gave the recipe and the link of this video to at least 10 people! Thank you so much!

    Made this cake today. The texture is great! However, we can taste the olive oil. Will use different oil or butter next time. thank you for the recipe. I love coconut!

      @@LeelaliciousNo, when i subbed it for melted coconut oil, the oil hardened as i was mixing the wet mix together. do not recommend!

      @@rrawrlolzzz4726 Try letting your liquid ingredients (eggs, milk) come to room temperature first next time. That should help with keeping the coconut oil/butter from solidifying. That definitely is more difficult in the winter though when kitchens and general room temperature are lower.

    Your voice is very relaxing ❤ i am currently waiting for it in the oven. I used swerve sweetner and butter instead of oil and then i added cranberries and put it in a loaf pan ill update on how it worked out!
    Update: it was DELICIOUS AND KETO FRIENDLY ❤❤

    We tried this cake and my whole family enjoyed it! I doubled the recipe and stored some in a sip lock bag in our fridge and it tastes even better a few days later. Thank you so much for sharing this recipe. Very yummy.

    Best coconut flour cake ever! I used Lilikoi/passion fruit juice instead of lemon as I was out of lemons. Turned out great! Thanks so much for the great recipe.

    I made two. Our batter was thick, the one I sent over to friends was thinner. I'm not entirely sure how theirs turned out, but we enjoyed this cake. It had a good amount of lemon in it. The texture was a little crumbly, but soft. I'll probably make it again.

      Yes you can. Most of my coconut flour recipes recommend coconut oil. However, with lemon flavors I really like the combination with olive oil. But coconut oil can be substituted for sure

    Hi .. thanks for the recipe.. just wanted to know with the amount of baking powder that u have used .. wouldn’t it make the cake taste bitter or something? Or make it more dry ?

      This is the recommended amount for this cake. Coconut flour can make fairly dense cake so we need more baking powder to raise it. I have never noticed any bitterness. They lemon may help neutralize it

    I was looking for a keto alternate cake and this was perfect. Very moist I used butter inside of olive oil. For the glaze I used Xylitol and cornflour as a low calorie version.

      Yes it works with either of the other oils too. I just like the combination of olive oil and lemon flavors, but feel free to use coconut oil or avocado oil, or even melted butter.

      Yes you can, but the batter will spread out a little thinner and will bake in less time. So keep an eye on it at the end

      No unfortunately not. Coconut flour is the dried, ground pulp leftover from coconut milk. It is different from just finely shredded coconut meat because a lot of the fat is extracted already

      No I don't think that will work. Coconut flour is not just finer ground shredded coconut. It's the extracted coconut pulp from coconut milk production. So it has less oils and moisture

      So glad you like it. While I haven't tested it out, I think the best vegan alternative would be aquafaba - the whipped liquid from chickpeas. I don't think flax egg alternative would work very well here

      Thats a great idea. I have a coconut flour blueberry muffin recipe with ricotta (leelalicious.com/coconut-flour-blueberry-muffins/) So I think it should work similarly in this cake. You could replace some or all of the almond milk with ricotta or mascarpone

      Yes, stevia is a great no-sugar sweetener. I don't usually bake with it though. I have drops. What form of stevia do you recommend for baking?

      @@Leelalicious l grow the plant on my backyard. I take the leaves and put them in a tupperware container then keep it in a fridge until the leaves get dry. Then l grind them to make stevia powder. The problem is the color of the leaves is still there. But l don't mind as it gives soft green to my cake.

      Yes to both. I did almond milk to keep it dairy free but any milk will be fine. Same with coconut oil. It's my preferred oil when baking with coconut flour, but for lemon cake I like the pairing with olive oil. But any oil, even melted butter will work

      I have not tried that myself. But a reader commented they make an egg-free version of this cake. The texture comes out a little different, more dense, but they still enjoyed it

      I have not tried replacing eggs in this specific recipe but here is my experience from other coconut flour recipes. I am thinking that aquafaba (the whipped chickpea liquid) might work best for making a light and fluffy egg free coconut flour cake. In general with coconut flour I find that flax egg works better for cookie or brownie recipes. Cake and muffins can be too dense. Or if you try it I would suggest to soak the flax meal in the liquid from the cake ingredients (no extra water).

      I have only tested this recipe with coconut flour. Using oat flour you'll probably need at least 1.5 cups of that, maybe even 2 cups. But I am not sure if any other adjustments will be necessary. A better option may be to look up a lemon oat flour recipe.

      I am pretty sure any real vanilla that is just vanilla beans and alcohol would be considered keto. Alcohol levels usually bake off in the oven's heat leaving only the flavor. Also, it's a tiny amount dividing 1 teaspoon over all the slices.

      That's a good idea. Coconut flour doesn't really work well without eggs, but I can try with another flour like almond or oat flour. Do you need it gluten free or low carb?

      @@gigiperez3105 I am sorry it didn’t work out for you. Sometimes it’s just the type of coconut flour that is extra absorbent. Did your batter look like mine or was it stiffer? Using a little less flour or adding a little extra liquid next time should fix it. Also be sure not to over bake it. In general though recipes with mainly coconut flour are on the grainer and drier side

    ½ cup unsweetened almond milk
    2 tablespoons lemon juice
    4 eggs
    1/3 cup olive oil
    1/3 cup maple syrup or sugar-free alternative
    1 teaspoon vanilla
    2/3 cup coconut flour
    1 tablespoon baking powder
    1/4 tsp salt
    1 tablespoon lemon zest

      I am sorry to hear it didn't turn out to your linking. I already use a lot fewer eggs than most other coconut flour recipes, since I am not a fan of eggy flavored baked goods either. But still, the flavor of coconut flour baking is not for everyone

    Too crumbly to eat. I froze the rest after tonight - freezing usually seems to make things more crumbly after thawing though. I thought the eggs would be enough, but I guess xanthan gum has to be added to all recipes like this.

      I am sorry to hear the cake turned out crumbly for you. I've never had to use xanthan gum in my coconut flour recipes. Could it be you had too much coconut flour or that yours was extra absorbent? What did the batter look like? At times my batter thickens up more too (I trace it back to different brands/batches of coconut flour). In that case I try to adjust the liquids to achieve a pourable batter consistency before baking, which usually ensures a moist (not crumbly) finished cake too.

      @@Leelalicious I'm new to grain-free cooking. It seems like things are a lot more variable and/or affected by the slightest changes. Egg size & the brand of coconut flour (store brand) could've made the difference. I'm putting a little xanthan in everything now to compensate.

    terrible result.. i followed the recipe exactly step by step and tasted sooooo bitter and fell apart taste horrible.

      Sorry to hear that. I am not sure how it would end up bitter. Have you baked anything else with this same coconut flour and olive oil? Could it be they have some inherent flavor you dislike? As you can see from the comments lots of other viewers had success with this recipe. Maybe you'd enjoy it more with coconut oil or butter as the fat component.

      Yes. Olive pairs nicely with the lemon but coconut oil is also great. If you don’t need it dairy free melted butter works too
