Prawn and Chinese Chive Dumplings with Eva Pau

  • Celebrate Chinese New Year in style with Eva Pau's Pork, Prawn and Chinese Chive Dumplings
    Ingredients:
    Gyozo Wrappers
    Filling:
    Minced Pork 200g
    Raw Prawns finely chopped 85g
    Chinese Chives 70g
    Spring Onion 1pc
    Seasonings:
    1 1/2 tsp light soy
    1/2 tsp Sugar
    1/2 tsp Salt
    1/3 tsp White Pepper
    1 tsp Sesame Oil
    1/2 tsp Corn flour
    1 tsp Chicken Powder (optional)
    Oil 1 tsp
    Dipping Sauce:
    1tbsp ginger
    2 tbsp Spring Onion
    4 tbsp light soy sauce
    2 tbsp Chinkiang Chinese Vinegar
    1/2 tsp Sesame Oil
    Method
    Combine all the ingredients of the dipping sauce and set aside
    Chop spring onion and chives and mix them into the minced pork . Add the minced prawn and all the seasonings to make the filling.
    Spoon the filling into the centre of the dumpling gyozo wrapper.
    Fold the wrapper in half to form a half moon shape. Seal the edges with water if you need.
    Cook the dumplings in boiling water until the dumplings float on the surface. Then add some cold water and wait for it to boil again. Repeat this process twice until the dumplings are cooked. Serve with the dipping sauce.

    Fun fact, probably the most authentic Chinese I had was in the heart of Dublin (a long time ago and I cannot remember the restaurant name) upon entering they said “do you want the Chinese or English menu?” I went for Chinese and chose “beef in spicy heaven” it totally lived up to its name. I lament not having had the chance to go back since.
