  • Chinese Dumpling is the most traditional food in China. Especially in north China, each family can make their own style of dumplings. People in the family gathered together to make it on Chinese New Year. It’s a must-eat food because it shaped like ancient money, people are hoping to get good luck and become rich the next year. It combines veggie and meat, some with eggs, it’s quite a healthy food!

    Recipes: Yield: 55-60pcs, serving 2-3 people
    Dough
    420g (3 cups) all purpose flour
    235g (1 cup) water
    2g (1/2 tsp) salt
    ------•------•------•------
    Filling
    30g (2 tbsp) light soy sauce
    5g (1 tsp) dark soy sauce
    5g fresh ginger
    5g (1 tsp) salt
    1g (1/4 tsp) sugar
    120g (1/2 cup) water or chicken broth(reduce some salt)
    500g ground pork
    200g chives
    ------•------•------•------
    My dipping sauce
    30g (2 tbsp) Chinkiang Vinegar
    5g (1 tsp) sesame oil
    5g (1 tsp) homemade chili oil

    i am a dumpling freak and ate it daily when i was in singapore after moving to Australia couldn't find a good dumpling restaurant until I found one .(.hot dumplings)and gorge on dem almost 4 times a week even if its expensive but now after seeing ur recipie who wants to eat out wen u can make the same at home...i thank u sooo much for explaining the recipe so well...m off shopping for the ingredients 😅.. thanks ...love

    First of all, i just so happen to choose and follow this video into making my first ever dumpling in my life and god let me tell u it is wonderful. I don’t know why but im kinda into dumpling these days and this definitely fit in the criteria and satisfaction that i like. I made this on monday, i did change it a little by changing ginger to garlic (I didn’t have ginger at home), not adding the sugar and also use ready made store bought dumpling wrap (to make things easier ofcuz 😂) and boi it is not a disappointment. I made half of this batches (around 26) and everything was gone straight away on that day. I used spring onion + korean chives instead which is also ok for my taste buds. I also tried both boiled and pan fried for this and i cant choose cuz both are equally yummy imo. My grandma loves it! Which im happy to hear, she literally thought i bought it from a store and was shock to hear its homemade 😂 i totally gonna make it for her again as she likes it hehehhe I usually don’t comment but i really want to thank you for this super easy recipe. This would be my go to recipe every-time i want to make dumpling!

    This looks so delicious! Could I pan-fry these? When I lived in Korea they had a Chinese dumpling restaurant and they pan fried plus steamed their dumpling. Their secret was they used a flour water mixture at the bottom to make it crispy.

      That one you said is called pot stickers , which is made with hot water dough. This one in the video is different, if you pan fry it directly, it will turn out very chewy. If you really like pan fried ones, you can boil it first then pan fry it. This method we usually use for leftover ones. I’ll take a video to show you how to make pot stickers later😀.

      Usually we freeze it right away with the tray, when it’s set, pack it with zip lock bags.Don’t leave frozen( raw) dumplings too long in the freezer, it will crack. Up to 2-3weeks is okay.

    Hello these are my favorites. I just wanna ask.
    1. Can i use Worcestershire sauce as the substitute for light soysauce?
    2. How to properly restore this? And how long is the shelf life?
    3. Can i also steam it? Thankyou so much

      1)different taste,soysauce can be found at many stores Walmart、Costco。。。
      2)put on a tray to freeze them until set, then store in a ziplock bag, put in the freezer can last for about 2-3months. Boiling method same, just keep stirring to prevent from sticking.
      3) It’s better to boil, if you steam them, they are gonna taste chewy. Steamed dumplings use different dough which has half boiling water in it.

      Yes! We always make some extra ones to freeze. First freeze them on the tray, when it’s set, bump the tray to loose them then store in a ziplock bag. Seal it tightly! It can last for about 2-3month.

      Yes, we can switch chives to many vegetables, such as Napa cabbage ( Chinese cabbage), daikon, yellow onion, green beans, green pepper even cilantro! Just remember those juicy veggies need to be cut and squeezed after mix with salt, so it won’t make the filling soggy.

    If i subtitute pork with chicken, could i still put chive or other herbs?

      You can add some green onion and ground white pepper, chive doesn’t goes well with chicken , try cabbage instead. Cut the cabbage into big pieces boil it for 1 minute then chop it in to fine pieces, squeeze out extra water, then use it as chives.

      Yes, it’s better to boil the cabbage in boiling water for 1 minute and drain before cutting.

    Thank you for the recipe. I tried and successful super yummy. my children loved it, even eat the filling. usually he only eats the skin when bought from restaurant.
    i only used small amount of spring onion. with beef mixed chicken breast. i found the dough a bit dry i added a little water or less flour on next batch. approx yield 46 pieces. plus 2 table spoons of fillings no skin. recommended recipe. im looking for vegetarian filling.

      500g肉,200g韭菜。在说明栏里已经添加,谢谢!如果不擅长包馅的话,可以适当减少一点。这个配比应该跟面团刚好都用完。

    Instead of making the dough can we go to a local pizza shop and buy their dough to use to make the dumplings?

      It is pretty easy to make the dough and probably you have the Ingredients at home already. Pizza dough sometimes have yeast in it and these dumpling wrappers don't have yeast.

      They’re different. Pizzas dough has yeast in it, it’ll proof and puff. This dumpling dough just needs 3 ingredients: flour, water and salt. Pretty easy to make, just mix them together.
