You can grate the santol meat after removing the seeds and cook it with meat or shrimps along with coconut milk.
So basically to use it as a vegetable. Gotcha.

Definitely not anything near the top 10 fruits. There are very few fruits here in Costa Rica that I won't bother with, and santol is one of them.
