    Ingredients:
    11 lbs Picnic Pork shoulder
    1 cup sofrito
    6 Tbsp Adobo
    2 sazon seasoning packets
    2 Tbsp oregano
    ½ cup extra virgin olive
    the juice of one orange
    the juice of 2 limes
    3 Tbsp onion powder
    3 Tbsp garlic powder
    2 tsp cracked black pepper
    2 Tsp Complete Seasoning
    Taste seasoning mixture & adjust accordingly
    Instructions:
    Mix all powdered seasonings & EVO in a bowl. Mix that mixture into the sofrito. Mix well.
    With a sharp knife, cut the skin away from the meat, leaving a small bit attached on one end. The skin may wrap around the bottom of the roast.
    Place the roast in a roasting pan. Stab a bunch of deep holes into the meat, on both sides. Fill the holes with marinade. Slather the top with more marinade,
    Rub a little marinade onto the skin.
    Roast at 250 degrees for 1.5 hours per every pound. (16 hours). Or roast at 350 for 40 mins per every pound of meat. (4.5 hours)
