To help clarify the item this is indeed a Spanish dish and its naming convention is from Spain. All the places that use lechón (ie Philippines / Singapore among many others) inherited it from Spain. While the name may be used elsewhere lechón originated from SPAIN.
Looking very delicious. We're from Costa Rica and just like you I also remember when my mother made pernil and just like you i went in for the skin. I think its time to make another pernil now. Just noticed how you incorporated the drippings back into the meat when done. You were thought well. That exactly what everyone should be doing. Great video.
Pernil is a national dish and traditional pork recipe of Puerto Rico. I grew up with many Latinos and have chef friends and trust central and South American don’t “traditionally” cook it this way! I’m from NYC/NJ family mix AF. The only other country that makes the best pork “lechón” are Philippines and Domis. But that style is 100% Puerto Rican prob consider the best pork recipe. Love your vid mama!
Ok Young Lady. I watched the video, basically, to,compare techniques. I’m Puerto Rican and have been cooking Pernil for years. Everything I’ve seen is on point as far as seasoning, pretty much, like I season it. The only difference is that I do the slits, however, I use the spoon to pour the seasoning Into the slits which helps me to ensure that the seasoning goes deep into the meat as opposed to just using my hands. Just a thought. Otherwise we’re, pretty much, doing the same thing with just that slight difference. Think about it. I’d like to read your comment on the subject.
Omg I’m watching this at 12:54 am and I’m drooling over here. That pernil looks fricken great and I wish I had some. I’m wondering pernil or ham for Xmas? You did a great job explaining how to make it 👍🏼
I've never heard of pernil before, but it look really good. when you are done cooking are your husband and kids in the background going, "hurry up so we can eat." Lol.
Tammy, you’ve got my mouth watering right now. I’m literally tasting it with my eyes. Magnificent! I have to make one(or two) this holiday season. Great work, Tammy!
Hi Queen With all the respect you Deserve but this is Puerto Ricans Pernil not Spanish Central America or South America no one make pernil this way like we Puerto Ricans is our SIGNATURE
@robertobeltran6116...that's not true....I am from Central America, and most of us cook our pernil, or any large piece of meat like that. If you know how to cook, that's the correct way to season your meat. You can also use that technique with chicken or turkey. The key is seasoning.
Thank you Robert for clarifying that. Although it's made throughout Latin America, the origins of Pernil, even the name itself, came from Puerto Rico.🇵🇷
It is siply baked pork for us in the English speaking Caribbean. We season ours too, I do not take off the skin becausemIndo not want it that hard, we slit into the meat and put seasoning into the slits, we do jot only use dried seasoning, we use a mix of chopped onions, garlic, green onions, thyme, marjoram, pepper, that is all blended put into slits and rubbed onto meat. So not only you all know how to cook.
Yes, Puerto Ricans call it pernil, we Cubans call lechon but, same thing. One thing we do is that in those little holes we put little slivers of garlic

Too many ingredients for puertorican pernil you just need oil in a pan lots of smash fresh garlic, whole pepper, oregano, sazon con achiote and salt mix everything together thats our PR seasoning with Cummin will change our PR flavor
