Lamb Pilou Ingredients List:
- 3 cups rice - wash until clear water and leave in cold water for 30 mins
- 1 kg boneless lamb leg - leg of lamb cut
- 4 tbsp ghee, 4 tbsp oil
- 1 sliced onion for garnishing the Pilou
- Garam masala (whole spices), 2 Bay leaf (Tez Pata), 2 cinnamon (cassia bark), 4 Cardimon
- Spice mix:
1 tsp turmeric powder, 2 tsp ground coriander powder, 2 tsp curry powder, 1 tsp cumin powder, 1/2 tsp garam masala, 1 tsp chilli powder
- 3 tsp salt (salt to taste)
- After adding the meat and the 3 cups of rice please add 4.5 cups of boiling water for 3 cups rice.
- Mango pickle - 6-8 pieces
- 4 green chillies - broken in halves
- Coriander for garnish.

My favorite cut of lamb/mutton to cube is the whole separated shoulder with blade - for flavour. A bonus if leg of lamb is a bit steep for me, is that it costs less for all that flavour! It just needs a bit longer tlc before the rice is added.
I just made this, very happy with the result too. Had to rescue the lamb at one point (sticking to the bottom of the pan) all good in the end, and the rice didn’t “catch”. The mango pickle (secret ingredient) is the bomb - fantastic when the taste hit you 😛

Made the dish today and it was great! I made it a bit different tho. I replaced 500 gram lam with 600 gram of minced meat and it might have even improved on the dish. It looked a bit like Paella and I asked my family which they found better. It was this dish!

This is my usual go to.
I blend green chilli, onion, garlic, ginger and fresh coriander then cheat by adding a tablespoon of karahi mix. Marinade the lamb shoulder over night.
The rice I make a stock from from ginger, chilli, garlic, onions, full peppercorns, salt and a pinch of sugar. Simmer that for an hour or 2, strain and let go cold. Soak the rice for 30-60 mins after at least 5 rinses to get the starch out until it runs clear. Cook the rice in the stock until it's about 80% cooked.
Cook the lamb on high for 5 mins then simmer covered for an hour or so.
This is the bit you might not like, I layer raw onion and the lamb between the rice, at least 2 layers of meat and onion and 3 layers of rice.
Then melted full butter, spread the ghee of it around the outsides and use the protein of the butter over the top of the rice and about 3 thin slices of lemon cut in half moon shapes spread over the top, then bake for an hour to 90 minutes on about 170 until most of the edges get crispy and the rice on top starts looking up.
And I love testing it when it comes out by just pressing down on the top and see it string back up. 😋

Make the same with chicken or prawns. Even minced beef does the job! I know minced isn't in chunks of meat, but if you make a nice Salad to go with it on the side, you'll be alright!!

Really easy to follow. Would appreciate any recommendations for curry & spices purchase in US. Have no idea of sourcing used at places like Amazon or large companies. Thanks for recipe. Will use the ghee-oil mixture suggestion

Any Asian supermarket carries all the spices you could need. Plenty of Indian grocers around. Some of the better supermarkets also have most spices in stock. Here in Illinois, Pete’s Fresh Market has an amazing Indian section.

It’s fresh garlic and if you leave it after smashing it for a bit it then it goes green

Can someone please recommend me a good garam masala to make for home use. I have a small spice blender, so can use and whole spices. I have a decent spice collection. I'd love an Asian family one.
4 table spokns of cumin seeds 2 table spokns of coriander seeds 3 black cardamon pods 1 teaspoon of black peppercorns half teaspoon whole cloves 1 cinnamon stick

Looks good but a very dry dish. I like a wet food what sauce could you add? Base gravy perhaps?
