it's very interesting. those are same culture in North-East Asia but those has different thing. it of Tiwan use crushed peanut, but it of Korea use soybean powder. i feel funny of same but difference as it.
Sometimes I wonder...how the heck did ancient humans come up with this? Was it dumb luck? Generations of careful experimentation, trying each and every plant in every possible permutation they could dream up, and seeing what worked? It really is mind-boggling when you think about it.

麥芽糖 其主體其實是「糯米」。
「麥芽」在其中是用來當〔澱粉酶〕使用,將「糯米」的澱粉 分解成 雙糖類的【麥芽糖】。

如果你不需要煮一大鍋,其實可以自己自製的。
甚至用一般的米 也可以,都是有澱粉。 只要放入「麥芽」,澱粉經過〔澱粉酶〕轉化 就會形成【麥芽糖】。
再把渣渣過濾掉,液體經過慢煮,水分慢慢蒸散到一定程度,就能形成黏稠的【麥芽糖】。
其實現在很多東西都可以機械化了 沒有人要做

原來是咁多工序做麥芽糖,還要是人手制作。好感動。不過要去臺灣才買到。。。

台語稱作麥芽膏,是我小時候的最愛,常撿路辺破銅爛鐵去跟,騎自行車的沿街收貨人做交易,可換得一小坨麥芽膏當零嘴,那香甜Q黏的滋味,是小時侯幸福的回憶。

也太多台湾人跑到大陆把在大陆学到的食品制作,回到台湾又重新加工一下发岀来说是台湾人自己做的,麦牙糖的制作很早就有人拍了地道的老乡制作法,比台湾这个制作的更纯,所以叫什么台湾美食是不对的
麥芽糖應該叫糯米糖才對。
跟啤酒、威士忌、伏特加酒、高粱酒發酵原理一樣,都需要發芽的麥芽,雖然有些酒廠用新科技,使用專用酵母菌,但東西方都發現麥芽能釀酒
