Just made this last night. I had to alter the recipe at bit since I don't have a 6x2 pan, and also forgot the lemon juice and strawberry jam, but it turned out amazing.
    Thank you for the recipe!

Yo Mr ProChef. I have a question that has been plaguing for some time. I have many of your vids where you add greek yogurt in your baked recipes.
What does greek yogurt do in baking?
Would baking spoil yogurt due to the milk?
Would baking destroy the probiotics in yogurt?
Why do you use greek yogurt?
What are the shelf-life of your recipes containing milk or yogurt?

    • @posthumanistpotato
      @posthumanistpotato 8 років тому

+Kaz FX-24 Well I can answer part of this for him. Greek yogurt has higher protein that regular yogurt and contains probiotics. Baking it might kill the probiotics, but the protein will stay in tackt. The reason for using it over regular yogurt is for roughly the same calories, far more protein. Yogurt is fermented so no, it wouldn't spoil from baking. I've never had one of these cheese cakes last more than a week in my fridge, because I would eat them. I'm sure their shelf life is slightly longer than that.

+William McDonald I sure do savor what I make on my own. Most of my recipes last up to 3 weeks or more. I use non-perishable ingredients but would like to use greek yogurt.

Question, wouldn't high heat change or destroy the proteins? We are talking hundreds of degrees and its whey based protein, completely different from cooking chicken or protein found in meats. How does all that factor in?

I have made two of your cheesecakes and both times I have had a lot of filling left over. You say 6x9 inch cake pan which I think is correct a 6x2 is to small. Can you pleas correct the link for the correct cake pan size. It looks like a 6x9 inch pan in the video.

Recipe is good. But according to my calculations, It has 1155 cals. So 288 cals per piece if you are dividing that into 4. It’s better if you are dividing it into 6 so one piece has 192 cals. Thanks for the recipe!!

The Protein Chef I'm very confused about the cake pan size. I really want to make this recipe, but in the video you refer to the pan size as a 6 x 9 (Six by nine inch). But in the description box the link says it's a 6 x 2 inch pan? Pls help. Don't want to get the wrong size

Recipe Looks Good And Interesting, My Preference Is Non Diary And No or Low Sugar Recipes. People Fat Is Not The Killer, Sugar Is The Silent Killer. So In This
Recipe I Would Substitute The Diary And Sugar, So Basically I Would Rearrange

+shonte0 Ok... I was vegan for the past 3 years until literally last month and am and was a vegetarian for 5 years before that, and 4 other years consecutively during my last two years in HS and first two and a half years in Jr. College... So I know how to cook vegan (and vegetarian) pretty well, but the KEY ingredients in this recipe are cream cheese and greek yogurt... Non-dairy Yogurt I know how to make (I have the cultures still) but it's super time consuming, so yeah you could just got get silk, but if you used a non-dairy cream cheese like Tofutti it would have almost no nutritional value. You're essentially making this:
      www.tofutti.com/lemon-ricotta-cheesecake/
There is 1/4th the protein in that cream cheese (1Gram a serveing vs 4grams) and soy yogurt and almond yogurt are even more ridiculously low compared to their dairy counterpart. And, as I found out, the whole Peta you need only 20grams of protein a day, is only if you are sedentary and that is just the bare minimum to stop the body from having a deficiency.
Not saying being vegan is sustainable and can't be healthy, but converting this recipe seems like a fools errand. The veggie protein powders are all terrible too, Sun Warrior the one touted by everyone is 1) filled with assholes and 2) tastes like gritty dirt water.
