He was a chef and taught my mom and myself how to cook but many years have passed and when I cook for my children and grands and I talk about the things he would make I can’t always remember all the recipes. I made this tonight although I had to half the recipe, and I had to order the long macaroni off instacart because none of the stores on my hood carried it. It is cooling now, very easy cheese sauce to make, I usually don’t eat like this, but once a year, I am good!

So there was a bidirectional food relationship between the two regions often as whites, blacks and mixed race peoples moved between the two regions for centuries. That’s why you can see similarities in our food culture here in New Orleans and likely other places in the U.S. south that may seem similar to some in yours. You then add the bidirectional foodways between our regions with Europe, Africa and other regions in the Americas like in Canada and Latin America and you can see all these food connections as if the bidirectional pattern was like a giant web. The history of this dish went from Italy to France and to England and then crossed the Atlantic Ocean to our regions, evolving further with each new journey since its invention in Italy. History is amazing.
I grew up on this stuff. Mac and cheese has a long history in the U.S., going from Italy to France to England to Virginia and other points south in the U.S. and finally to the rest of the country when the boxed variety came on the scene. Each time evolving a little on its long journey. New Orleans definitely has its own style of it. I grew up calling this dish “baked macaroni” in New Orleans. Rocky and Carlo’s in Chalmette is known across the whole gulfcoast for it and serves up massive plates of it to many thousands of people. Baked macaroni is truly a New Orleans favorite. I made the bread pudding without the alcohol first because I never made it before. I followed your recipe and boy was it scrumptious!! I ate it with bacon for breakfast.
