I made this for July 4th weekend; surprisingly Ginger Beer was all sold out so I improvised with Coke and grated fresh ginger in. Absolutely fabulous recipe! I did cut down the amount of sugar quite a bit since Coke has a higher sugar content. Will be making these forever and ever!

Most Americans will have access to ginger ale, however, and likely ginger beer as well. It’s become pretty popular over the past years due to the Moscow Mule cocktail becoming pretty popular.
It absolutely will work as a substitute. Root beer is not nearly as strong as ginger beer. The sweetness will work, it just won't have any of that bite the ginger beer has but will definitely work. Add some fresh grated ginger if you like.
I agree. If you don't want to run out and get a ginger beer or ale, just use the root beer. I don't think it will be remotely the same, but you will get the same sticky effect, def NOT flavor though

We have ginger beer in the U.S., too. Any grocery store with a proper Hispanic section will stock it. Liquor stores carry it, too. One of my aunts loves to drink ginger beer and she always buys some every time she takes my dad out shopping.

The closest thing in North America would actually be Canada Dry ginger ale, or Schweppes’, though we can also find better artisan brands of ginger beer proper. Great recipe, and as fun to watch as usual.
I season my ribs whole then sear them in a pan. After that I place the entire rack standing up in a crock pot without any liquid until tender. (Usually takes about three hours on low).
