aapne mujhe mere bachpan ki yaad dilaa di, you won't believe, aaj se 16 saal pehle meri daadi ne aachar daala thha, everythiing you mentioned as ingredients were added at that time except vinegar, 2 big barnis were filled and the achaar was aprox 10-12 kgs, that same aachar hum aaj bhi istemaal kr rhe hai and it is well preserved.

Buayein sah parivar 3-4 mahine aake rehti thin. Ab to log apne maa baap ko bhi sath nahin rakhte. Ek hi bacha. Mehman sham ko aye raat ko chale gaye. Ab gharon mein barkat nahin.

सर हमारे यहां भरतपुर में तो आम के अचार में मेथीदाना को पहले दो-तीन घंटे भिगोकर करीब आधा घंटा पंखे की हवा में फरहरा करके जब तेल गर्म करते हैं उस समय जब तेल हल्का गर्म हो तब उसमें मेथीदाना डालकर उसके बुलबुले थोड़ा कम होने तक भूनते हैं फिर कटे हुए आम और मसालों को डालकर अचार तैयार करते हैं। बहुत स्वादिष्ट बनता है।
