सर हमारे यहां भरतपुर में तो आम के अचार में मेथीदाना को पहले दो-तीन घंटे भिगोकर करीब आधा घंटा पंखे की हवा में फरहरा करके जब तेल गर्म करते हैं उस समय जब तेल हल्का गर्म हो तब उसमें मेथीदाना डालकर उसके बुलबुले थोड़ा कम होने तक भूनते हैं फिर कटे हुए आम और मसालों को डालकर अचार तैयार करते हैं। बहुत स्वादिष्ट बनता है।

Pehli bar aap ka video dekha, aachar banane lgi hoon. Aap ka treeka dekh kr mujhe pachas sal pehle jaise meri mother aachar bnaati thi , voh samya yad aaya. Han, tab veh bees pachis ser (kilo ) aam ka achar bnaati thi. Vinegar nhi dalti thi ,achar bilkul khrab nhi hota tha.
