Maybe there is an intro video to which you can refer me, but as a complete novice, I am wondering about which type of bag to use when - parchment, plastic, lined cotton. I am an environmentally conscious person so would prefer to avoid plastic but for some reason I think that would provide the most control...? It seems like the reusable cotton would be hard to keep wrapped at the end....? Thank you again!

You spin the cake on the turn table as you spray they edges.The other way is to ice the cake in white and then add the color to the top and bottom edge, then use your spatula or bench knife. Hold them still while you spin the cake. Hope this helps.

RaMona Timonere Hi Mona, I almost always use a #23 star tip. But you can use any size star tip for the reverse shell border. It just depends on the size you want.

hi Liz :( ok so the book cake cake out ok, the only thing is my edible photo is a little bit bigger like an 8 by 10 size. I have the 15 inch pan that bulk barn sells here in canada. What do I do? try making another batch and not cut too much? I only cut the edges a bit that's it. And also my question is how do you get a smooth top when you bake. I see youtubes where tehre are not rough edges etc. I put the wet cloth around the tray too. So I don't know why I am getting that roughness. I am going to bake another batch to see and not cut as much and sandwich all together as it's for 40 people. Need alot of cake. Also can I mix whip cream and regualr butter cream just to sandwich? Thanks

Here is a video that will give you some tips on baking the cake to get a little more level. You can try whipping cream and pudding together for filling, it's yummy! mizz gee I am using a #104 Rose tip here. You can also use a #124 if you want larger Pansies.

My icing is thick but when I pipe the petals they are not holding shape they kinda melt . I can't get the icing much stiffer how can I prevent this?
