Well I did a double take when I saw your brown sugar. I guess it's because most of the recipes that I've been watching that include it use dark brown sugar but it was very obvious after I thought about it that you had to have been using light brown sugar. I haven't seen that in ages but your recipe looked really good!
If you don't mind my asking what kind of ribs are you using here? Are these spare ribs? Cuz I noticed you cut a lot of fat off of them and the ribs that I buy are eating baby back ribs or spare ribs and they don't have that much fat on them. 🤔
I don't understand why people pat dry the meat because the seasonings stick better and seeps it the meat better and why instead of just putting the meat in the seasonings he's waisting it by drizzling it on it

There is dark brown sugar and light brown sugar bt C & H where I live.
