    I just did a hybrid of this recipe, I was following another one and there was just too many seeds but somehow I can't find my sieve, probably the ex took it, anyways I started with a different recipe and finished with yours. This is much better than what I was originally going off of, next time I'll just do this. My blackberries are out of control, there will be more of them. Its cooling down so we'll see how it came out, couldn't get all the seeds w/o the sieve.

    hmm.. i've never ran my blackberry jam through a mesh sieve before. Next time I can some, I might just do that. I don't typically care of there's seeds in my jam though.

    I followed his method and the timing ⏱, but I went with 409 grams berry (4 cups) and 250 grams sugar and 1 and 1/2 Teaspoons of lemon 🍋 juice. It turned out so nicely with a nice spread consistency like his . With very less sugar .

    Hi Michael, thank you for the recipe. Just a few questions. Did you sterilise you equipment, jars and lids? Were the jars hot when you poured the hot jam is so they wouldn't crack? Did the lid pop to form a seal to stop bacteria getting in and contaminating jam? Thank you.

      If you intend to keep it for many weeks, you sterilise the jar by soaking it in boiling hot water. If you pour cold water in a VERY HOT jar, perhaps will crack depending on the quality of the jar, but pouring hot jam in a VERY HOT jar will not crack, it will sizzle. So define hot?? As long you close the lid immediately while the jam is still hot enough, it will seal quite tightly.

      @@michaellim I only asked the questions as you didn't show the process on your video and someone who has never made jam before might not have been aware. I boil my jars in a canning pan & rack set. I take a few out at a time and pour in the jam fasten the lid finger tight ( I use Kilner two part lid preserve jars) I them return them back to the canning pan and boil the water for the rubber to form a seal so I guess it depends on what jars you use.

      No strawberries and raspberries have less pectine, so you should add pectine or gelatine.

      Or just add lemon juice. That will work just fine as a pectin :)

    I love it, Each year I make my own blackberrie jam, last year 16 yars. But my mayor decided to cut all the plants this year 😔 I think I have to wait for 2 years before they are back. 😔
    The self made yam is yammie on in a crumble cake or inside a biscuit cake.
    I also make my own pineapple yam. The store bought are so chemical...except the yam of the brand Hero...but they don't have pineapple yam anymore.

    My Jam didn;' set ! It's still liquid ! How did yours set without pectin ? I have the same consistency as when I poured warm from the pan. Thanks. Someone recommended some apple to make it set.

    How long will it keep I had problems with mold growing on the jam what can I do to stop the mold

      To address the issues with mold growing on your jam and to ensure it keeps for a longer period, consider the following tips:
      1. Proper Sterilization: Ensure that the jars and lids you use are thoroughly sterilized before filling them with jam. You can do this by boiling them in water for 10 minutes or using a dishwasher with a sterilize setting.
      2. Sealing: Make sure the jars are sealed properly while the jam is hot. The heat creates a vacuum seal that helps prevent mold growth.
      3. Refrigeration: Once opened, store the jam in the refrigerator. This slows down mold growth significantly.
      4. Sugar Content: Ensure your jam has the proper sugar content. Sugar acts as a preservative, and low sugar can increase the risk of mold.
      5. Acid Level: Adding a bit of lemon juice can increase the acidity of the jam, which helps inhibit mold growth.
      6. Avoid Contamination: Use clean utensils every time you dip into the jar. Avoid double-dipping or introducing crumbs and other food particles into the jam.
      7. Check Storage Conditions: Store unopened jars in a cool, dark place. Excessive heat and light can encourage mold growth.

      I often don't even add sugar i just cook it for a long time on low heat after it has been heated well, however I would recommend adding sugar for most people prefer it that way. Blackberries have a lot of pectine in them so blackberry jam doesn't need many ingredients. If you cook the pots before you put the hot jam inside it, fill the pot completely and put it upide down to cool you can keep them in your cabinet for a few years (unopened), especially if you added sugar. After you opened it you should keep it in the refrigerator. When it starts to smell bad or mold starts to appear you (obviously) can't use it, but until then it's totally fine. It often depends on the weather ( and thunderstorms), the temperature of the fridge etc. how long you keep it.
