It is definitely right. Cooking the sugar syrup to 150°C ensures that the candy will get hard. The water naturally evaporates as the syrup boils - hence why it is cooked uncovered.
I consider an instant-read thermometer to be as essential to cooking as pots and pans, so I (personally) wouldn't classify it as a "frill". However, I do have instructions on how to make this without a thermometer in the recipe linked in the description.

No problem pouring this into moulds so long as they're heat-safe :) Happy you liked the recipe!
Can I do this with brown sugar?
I would not recommend using brown sugar as it will not behave in the same manner as white 😊

It's not getting hard and stays like a thick fluid! Why?
You need to ensure that the syrup is cooked to at least 150C/300F or it won't set properly :)

This can't be right. Is it? You need to evaporate all of the water off before you let it sit or it will not get hard. You don't mention this
