Quick Buttery Scallops
Yield 4 servings
Time 15 minutes
1 1/2 pounds large king trumpet mushrooms, caps cut off where the gills start and reserved for another
use, dirty ends trimmed
4 tablespoons (2 ounces) cultured vegan butter
1 tablespoon vegan fish sauce
Kosher salt and freshly ground black pepper
Run a small, sharp knife lengthwise down one mushroom stem, scoring it just about 1/8 inch into the
mushroom. Repeat at regular intervals 4 more times around the stalk. (This will allow the mushroom to
shrink with ragged edges as it cooks, and mimic a sea scallop more in texture.) Cut the scored stalks into
3/4-inch-thick discs. (You’ll get about 3 per mushroom, depending on its size.)
Heat a large skillet over medium-high heat. Add the butter. When the butter has just melted, add the
“scallops” with one flat side down and cook until deep golden brown on each side, 6 to 7 minutes, turning
halfway through once the first side has browned. Add the fish sauce and 2 tablespoons of water, swirl to
coat the pan, and cook another 30 seconds or so, stirring to coat all the scallops in the sauce. Season with
salt and pepper (but taste first, as fish sauces have varying levels of saltiness), and serve hot.

King Trumpet Mushroom Bacon
8 ounces King Trumpet Mushrooms (choose the largest you can find)
2 tablespoons oil
2 tablespoons nutritional yeast
1
½ tablespoon soy sauce
1 teaspoon liquid smoke
1 tablespoon maple syrup, optional for Canadian-style bacon
Slice the mushrooms lengthwise into ¼” inch slices. In a bowl, combine the oil, nutritional yeast,
soy sauce, and liquid smoke. For Canadian-style bacon, add the optional maple syrup. Toss the
mushroom slices in the mixture and allow to marinate for about 30 minutes. Although it will
look dry at first, the mushrooms will release their juices and be sitting in a marinade within 10 to
15 minutes.
Preheat the oven to 400°. Place the slices on a greased baking sheet, making sure they do not
overlap. Bake for about 20 minutes, then flip, and bake for an additional 15 to 20 minutes until
browned.
Smoker Method: If you’ve taken my advice and invested in an inexpensive stove-top smoker
(around $50), try it this way. Make the marinade as above, but skip the liquid smoke. Marinate
the mushrooms for at least 30 minutes, but up to a couple of days if desired. Then smoke in your
smoker for about 20 minutes, following the manufacturer’s instructions for adding woodchips
and heating if necessary. You can store the bacon in the fridge after smoking until you are ready
to cook and serve. To cook, sear the bacon on both sides in a oiled skillet until browned. This is a
great appetizer as well.

Trumpet Mushroom and Avocado Ceviche
Serves 6
12 ounces trumpet mushrooms, or combination of trumpet and other mushroom (such as shiitake,
hedgehog, oyster)
1/2 red onion, sliced thinly, or 3 to 4 green onions, sliced
1/2 roasted red bell pepper, skinned, diced small
1 sheet nori, torn into little pieces
1/2 teaspoon cumin seeds
1/2 cup freshly squeezed lime juice
1 tablespoon sake
2 avocadoes, cubed
1 cup loosely packed cilantro, chopped
1/4 cup loosely packed mint, chiffonade
Salt and pepper to taste
Clean the mushrooms by wiping with a damp cloth. Cut them into bite-sized pieces, or slice into
1/4 inch slices. Don’t make them too small, because they will shrink, and you want meaty pieces
to chew on. Put them into a medium bowl, and combine with the onion, nori, roasted red bell
pepper, cumin seeds, lime juice, and sake. Cover, and refrigerate for 2 to 3 hours to marinate.
Gently toss with the avocado, cilantro, and mint, and season with salt and pepper to taste. Serve
chilled.

I made ur mushroom civiche for my family on memorial day. I added fresh corn to it too. My aunt really seemed to like it. I actually planted mint outside specifically so i would have it to make your recipe this season! Oh AND made ur unribs for memorial day too. I got left overs in my freezer for more summer bbq occasions. You’ve literally taught me so much about vegan cooking.

A nutritionist said mushrooms have B12 vitamins. And nutritional yeast also is a food source of B12!

Is there another option for the mushrooms? I've never seen anything like that here in the Texas panhandle.
First one must find king trumpet mushrooms. I cant find them up here. So sad.
So sorry! They are one of those things you never saw years ago, and now, they are everywhere where I live (California).
