    Whenever I see an old beat up cast iron pan at a yard sale I bring it home and fix it up. They are just so amazing to cook with.
    Adopt...fix...and pass along. Cast iron skillets. The gift that keeps on giving 🎉

    I definitely use another cast iron to press but also have a brick in my kitchen to add extra weight.....works fabulous

    made stuffed mushrooms last night, Portabellas. I just found these Kings at the asian store. I made them into a scallop kind of things. So interesting how the chew reminded me of squid. Anyway, thank you for de mystifying, Tofu and Mushrooms, and making me get out the iron pans. They are heavy but they do work well.

    Black Garlic is also something good to flavor mushrooms. You can use both kinds of garlic as they mix ok flavor wise.

    Love it! This recipe is really great, we tried it and the mushrooms came out so good. If anyone tries making it, you can easily change the seasoning and ingredients around a bit and it will still be super great.

    Glad to see some Derek videos on the channel lately and the mushrooms look great!
    I sometimes use a wide skillet (not non stick) with my (all metal) tea kettle on top of it to press the shrooms or whatever I'm searing.

      with all due respect but that is not healthy. But not everything needs to be so. I am sure it tastes delicious as have many recipes i tried from the wicked kitchen. calorie-wise this is probably worse than fried mushrooms and too much fat to be ever considered healthy. Definitely gonna try this one out haha

    Some stores here in USA sell them already sliced. Thanks for this recipe. Olive oil is actually good for some health conditions, so a small amount isn’t a bad idea.

    What if you made some broth with Kombu and soaked the scallops? My favorite mushroom right now are the King oyester for the firm texture and flavor. I’m so pleased to see so many different recipes!

    I had bought some vegan tuna yesterday and when i came home I saw it’s your brand! It was really good, love that is it gluten free! All the other vegan tuna has gluten, which I can’t eat. I made tuna in delicious tomato sauce on white bread and I really felt like my 10 year old self again. The only cons for me are that you don’t use olive oil but sunflower oil (olive oil would be more delicious I think) and that the price is a little high so it’s not something I can buy regularly (student budget). It is really well spiced and tasted quite similar to how I remember canned tuna in tomato sauce. I hope to see more of your products on the supermarket shelves here in The Netherlands!

      For when you cannot buy Derek’s vegan tuna, have you tried making your “tuna” with crushed cooked chick peas? They work great, I was surprised how good it was and gave some to my omni husband to try. He could not believe there was no tuna in it. Crush the chickpeas and the. Use wherever you would use tinned tuna, preparing it however you like your tinned tuna.if you like it a little on the fishy side, add some finely chopped nori (sushi seaweed sheets ).

    In the US, Publix sells pre-sliced king oyster mushrooms.

    What kind of rags do you use to clean the water from under the pans? I've tried a few of thems and they leave fiber residues behind and I don't want that on my yummy mushrooms 😋

    I can’t get my mushrooms to get crispy... They release so much water that they brown/cook but don’t crisp. I’m I undercooking? Is my pan too small?

    What is the science behind making “ crispy “ oyster mushrooms or crispy mushrooms in general? The last time I fried and baked oyster 🦪 mushrooms ( as a meat substitute ), every attempt I made, they turned out slimy and mushy 🤢🤮🥴… Tasted disgusting. So, I Never made them again!

      Make sure most or all of the liquid left the mushrooms before frying

      A nice hot pan...like...hot! And don't play with them while they're cooking, just leave them to sear, that helps to seal the liquid inside.
