Mouthwatering One Pot Jhal Pulao Recipe | One Pot Spicy Chicken Pulao

- Experience the authentic taste of Naogaon, a district nestled in the northern part of Bangladesh within Rajshahi Division, celebrated as the 'bread basket' of the country. Our traditional One Pot Jhal Pulao recipe honors Naogaon’s rich agricultural heritage, known for its fertile lands that produce essential spices and grains. While traditionally, this dish includes dry red chili and chola boot, our adaptation omits these ingredients as they weren't available, yet it still captures the essence and delightful taste of the original. This guide offers a flavorful meal combining aromatic spices with locally grown rice, bringing a piece of Bangladeshi heritage to your table-perfect for any gathering.
Ingredients:
Mustard oil: ⅓ cup
Cooking oil: 2 tbsp
Onions, thinly sliced: 1½ cups
Green chilies, slit: 5-6
Garlic cloves, thinly sliced: 6 large
Ginger paste: 1 tbsp
Cinnamon sticks, medium-sized: 2
Black cardamom: 3
Green cardamom: 6
Pepper: 8-10
Cloves: 7
Bay leaves: 3
Red chili powder: 1½ tsp (adjust for heat preference)
Turmeric powder: 1 tsp
Chicken, cut into small pieces: 1.2 kg
Salt: 1 tsp + 2 tsp (to taste)
Cumin powder: 1 tsp
Coriander powder: 2 tsp
Rice, washed and soaked for 30 min: 3 cups
Hot water: 6 cups total (1 cup + 5 cups)
Instructions:
In a large pan, heat mustard oil and cooking oil over medium heat.
Add sliced onions and sauté until they turn light brown.
Introduce the slit green chilies and sliced garlic cloves, continuing to sauté until they turn brown.
Stir in the ginger paste and sauté for 30 seconds.
Add cinnamon sticks, black cardamom, green cardamom, pepper, cloves, and bay leaves. Sauté until fragrant.
Add a splash of water then mix in chili powder and turmeric, and sauté for 2-3 minutes on medium heat, adding splashes of water if spices stick to the pan.
Once oil appears on the edges, add chicken pieces and mix well with the spices.
Season with 1 tsp salt, cumin, and coriander. Cook on high heat for 2 minutes, then cover and cook on low heat for 2 minutes allowing the chicken to release its juices.
Uncover, and sauté chicken in its juices for 5 minutes on medium heat.
Add 1 cup of hot water, cover, and simmer for 20 minutes on low heat, stirring occasionally.
Mix in the soaked rice with the chicken, then add 5 cups of hot water and 2 tsp salt.
Bring to a boil on high heat, then reduce to low, cover, and cook for 20 minutes.
Check for water on the side, stir well, then cover and let it rest for 10 minutes on the lowest heat.
Serve hot and enjoy your delicious Jhal Pulao!
