I would kill to have such a supportive staff. They were all in tears when Gordon revealed the new restaurant interiors as if they were the owners. The chef teared up seeing the new kitchen equipment. Any of them could just go and work somewhere else if they wanted.

That's literally what I was thinking and checked the comments to look for people who noticed that. To see Cindee crying for them and crying at the fact that they are crying out of happiness (26:14) and the entire staff crying alongside them; it's like one big family and honestly, this is probably the most supportive and most amazing staff I've ever seen in any episode.

I managed an Italian restaurant that has been running for 38 years. The majority of the guest are people who’ve been coming to the restaurant since it opened.
I kept trying to impress upon the owner that 25% of the guests won’t be around in five years, due to their age, and the menu needs to be improved if we want to attract a younger crowd that will be around for a while.
    It fell on deaf ears.

@@johndelaney2957 Because they know most people are pigs who'll still come to stuff their face at the slop trough. I've watched the owner of my restaurant dump half eaten soups and sauces back into the hotwell. Spread the word as much as you can because allot of the places we work at can fire us at any reason for any time, so if WE ourselves speak out we get fired and likely blackbarred from working in any restaurant in that town ever again and likely even anywhere as you won't be able to use those references anymore.
Also the reason most restaurants are like this is due to WAYYY too high a volume for what a 8-15 crew kitchen can handle so they allow cleaning and things like that to go by the wayside; additionally, as in my case, the owners are way too cheap to let anything go to waste because they wouldn't be able to afford if they did. My bosses literally wouldn't let us make any overtime until this month if they could help it.

    • @Zac15
      @Zac15 6 днів тому

      Apparently it is?
The name "Flemming" is of Danish origin and is derived from the Old Norse name "Flæmingr," meaning "from Flanders."
The single M version I knew sounded familar to me though
Fleming is a name that originated amongst the industrious people of Flanders The name came to Ireland with the Anglo-Norman settlers that followed the Strongbow led invasions of 1171 and 1172. The Fleming name is derived from the Old French word "flamanc," which means a "Flemish person" or simply a "Fleming." "Many natives of that country joined William the Conqueror in the invasion of England.
So it looks like a Norman name that did a little traveling over the last millenia 🤷‍♂️

As a Dane, this hurt a bit to watch. Not saying our cuisine is the best in the world, but those dishes were butchered.
For instance, the duck. Duck is mainly eaten at 'Mortens Aften' '(November 10th), a Danish traditional(religious) evening to remember Martin of Tours, and then at Christmas. Sure, duck is eaten all year round, but these two dates are the main times duck is eaten in huge numbers.
The cured salmon here, the gravlax, is nowhere near what Danish cured salmon is (gravad laks).
The Danish meat balls (frikadeller) here looks to be decent, in appearance at least.

It's nice to have an episode with a chef who actually knows what he's doing (just maybe not for Danish food)

Miami has thousands of restaurants that serve the food that Gordon brought in. Should of kept some danish dishes, learnt how to cook them properly and that way you stand out from the crowd.

being a restaurant must be the hardest business to run. as long as you can keep a great chef, you are good to go. its when they leave that everything goes to hell. i only goto 1 place for steak now. every other place was either great one time and bad the rest.

Normally happens cuz the owners mistreat their employees so eventually only the bad ones stay and bad ones come in and since the owners bad everything just gets worse overtime.

So I’ve watched quite a lot of these episodes to understand some things
-Most of them are in huge debt
    - Gordon usually refurbishes the places, and I’d like to think he pays for it too.
-just by that, obviously chances are very high that they will be some improvement in the income being generated
So in other words, if it weren’t for the cash injection that Gordon brings in, most of them would just go broke and die out
