    Since retiring to Texas, this is my first season with enough to make syrup. I always like using honey and an array of spices; ginger, cloves, cinnamon, nutmeg. So good for winter sniffles...oh, and even though we aren't drinkers, a dash of whiskey really nips a cold out, just like grandma always said! 😁 And this year I'm going to freeze dry my syrup for long term keepage. 👍🏻😋

    I love making elderberry syrup with raw honey instead of sugar for added health benefits. I make a small batch at a time using dehydrated elderberries, add the raw honey after it has cooled to under 100 degrees and just keep it in the fridge. I was thinking you could do water-bath canning and add the raw honey when you open a jar.

      Very good points I had recorded a bit in there about using honey except that it wouldn’t be raw after you cooked it but yeah you could add it afterwards and it would still be raw

      Love this idea of syrup but no fresh elderberries nearby. Glad to hear from Debbie about using dehydrated ones, just one question, do you cook them as long?

      @@Latebloomershow I make elderberry syrup with raw honey every year, but I didn't think that I could preserve it in bottles or jars without sugar or some other sweetener. As was said already, we don't want to heat up the honey and ruin all the good nutrients in it, but that would be great if you could bottle the elderberry without any sweetener and add it later.

    I make elderberry syrup as well but never thought of canning it, I will be canning going forward. I planted some mullein plants and the leaves are huge, I think I'll be incorporating with my elderberry syrup mixture

    I have made elderberry jelly since 1960. I can pick enough elderberries for a year's worth of jelly in 20 minutes. They grow wild here. In the early spring I would pick the white flowers, dip them in a light batter and deep fry them. They're delicious. To wash both the flowers and the berries I would put them in a half-full of water laundry tub. Swish them very well, then take them o the kitchen sink and wash again and pull the berries from the stems. and sit the flowers on a towel to dry. I never knew anything about the green berries being toxic. If they are, I'm sure I've eaten a lot of toxic jelly, jam, and pies. The pies are an acquired taste. They don't taste like a blackberry, or blueberry pie. The jelly and jam don't have the 'elderberry' taste, they could be mixed fruit, or anything.
    My neighbor made elder-flower wine. (I'm not a wine drinker, so I didn't try it, but it was pretty.)

    Thanks for the promotion .!! I use cane sugar not organic cane sugar as it's too pricey and not available in my local store. It' s the sugar that does not say cane that is made with GMO beets . I usually leave herbs or elderberries on an outside table and most bugs will leave within about15 minutes or so . I don't usually wash berrys . I only recently decided to make syrup .I usually make tinctures with no sugars and dry some for teas and make a sweet elderberry wine. This year I decided to make a syrup i could can as well as sell and some goodies from the garden. I used a simmered tea from my cardamom leaves, chopped ginger root and Cornealin cherries that I hand removed the pits from so I could try to sell the trees .It was extremely labor intensive so i would only sell the 4oz jars for $20 or a few hours of garden labor. MIN wage is $7.50/hour and much labor went into just a few jars of this awesome syrup ..I froze some too and used some to make homemade ice cream with my eggs and local milk and cream. I am so proud of you Kaye for tackling this and teaching others .I hope it turns out great and you added water to the pulp to get all the goodies left in the pulp ..I added my pulp to my blackberry wine

      @@Latebloomershow sure.. there's many ways to preserve them !!!I use a nylon wine bag for squeezing out the last juices out of my stuff and in the end the chickens get the pulp. You did a great job and now have it preserved even if the power goes down or you want to gift some ..

    The past couple of years testing has been done on elderberries. There is a ratio of sugar to juice that has to be used to be shelf stable. The ph of elderberries has been found to be not acidic enough.

      You can prune them low and for every branch cut at 12” pieces and poke in the ground. They will for sure grow free plants all over your property. And dig up suckers to give away or sell. Easy propagation!

    Why syrup and not jelly Kaye? It looked yummy. Never knew you could can syrup. I picked a gallon and a half this summer. Still in the freezer. I might make some of your syrup out of them. Rest some. You work to hard. ♥️

    i didnt get elderberries this yr but found and harvested choke cherries this year. make jelly or syrup freeze juice if you want to heat up the kitchen in the winter.

    I want to make this too. I bought some made by a family nearby to have on hand (Blossom Creek), but ordered a black lace elder berry plant and two other kinds from Proven Winners directly. You have to have more than one to pollenate each plant. They came in small cans. I repotted not gallon cans and they will winter over in the green house until spring. After I received mine, i realized we had many wild elderberry trees on our property. Kaye, are your plants wild or did you plant them? Hope you have a great Labor Day!

      Although I have it growing by the road on my property but it was back in the weeds and I didn’t get a netting over it so I couldn’t keep the berries from the birds

    Kaye, the sugar you may be looking for is SUCANAT? It's the least processed sugar. The only "bad" thing about it may be the color. It runs amber to light brown.
    Your syrup looks wonderful.

      Well I’ve only been here for a little over a year and a half and I bought three plants last year I think it was last spring and later in the year actually I don’t remember but I pulled out one of them because it has that wilt and so I managed to get enough berries off of two plants to make 9 half pints. Then this spring I bought three more plants no two more plants and one of those two plants produced one series of blooms one bloom head off of one stem and I think the birds ate all the berries because I did not cover it. You have to cover the berries. So to answer your question the sooner you order your plants I guess you’ll have to wait till the spring get them in the ground you might get one little series of blooms next year but it will be the following year you’ll they will bloom out. That’s my experience. I also bought three bare root canes I think from Stark Bros. and I didn’t get them in the ground soon enough and they died so I wasted all that money

    Just beautiful Kaye! I think you can also freeze it too but not sure how long. Canning is best for the long term even though it is a lot of work. Thanks so much for the demonstration and recipe now all I need to do is grow some berries. LOL

    Sounds good. I do purchase bottles of it. I am battling a large infestation of grasshoppers! Hundreds if not thousands are here on the quarter acre and same size vacant lot next door. Most are still smallish and are green colored, but I have decided to banish them if possible. I am brewing up a quart of water infused strongly with rotten onion (1 large) and 2 small year old garlic bulbs crushed. I also have a teaspoon of Canola Oil in the quart. I may make a batch of hot Pepper spray too. Just want to keep my one artichoke, and the other baby veggies safe from the hords of hungry grasshoppers. Whew! If not severe weather, drought, and now heat, it is voracious insects.

    I just came from a fall festival at the church across from mine. I made contact with a couple who will have elderberry starts in the spring. Hopefully I'll be able to get at least one. I remember my grandmother sending me to my uncles woods to get her elderberries for her grape jelly. I certainly hope I can get. Also want to find red raspberry and blackberry starts. I got 2 1/2 pints of cinnamon candy apple slices and am working on apple scrap jelly. Waste not, want not. Have a wonderful weekend. Much love. 🥰❤🙏

    Good morning Kaye. My favorite method of maintaining a sustainable pantry and stockpiling items long term for the whole family and the family dog and the family cat is what I consider to be the most practical, utilizing every type of food storage methods and technology available, both old and new. . Except for the fruits and vegetables that get canned, I keep perishable items like meat, poultry, fish, fruit, vegetables and dairy products in the refrigerator on a short term basis until I'm ready to use them for a big family meal - and for even longer term sustainable storage, a large separate freezer, which can store a half side of beef with plenty of room left over for homemade ice cream etc. . I'm considering upgrading to a walk-in freezer at some point.in the near future, if my plans to open a bed and breakfast come to fruition. Sometimes, however a nice round of cheese can do well for quite awhile on a pantry shelf at room temperature - and doesn't mind even if it has to stand there alone. Store bought canned goods get shelves.in the large pantry closet - several for canned meat like corned beef hash, spam and sandwich spread and another for canned vegetables Bread, rolls, grains, homemade pasta, cereals and the like are stored in special humidity controlled bins I order from Amazon Prime - which usually get delivered to my doorstep about an hour after I order them. . Stuff from the family garden and orchard, like onions, bell peppers, tomatoes, cauliflower, cucumber, pumpkins, carrots, corn celery,, potatoes and yams, cherries, blueberries and strawberries get canned in Mason Jars and stored in the cool, root cellar of this wonderful rambling former farmhouse (circa 1867) I share with my extended blended family and several rambunctious dogs raised on table scraps from the some of the finest food from a plethora of sources both commercial and home based. . There's even a special separate "summer kitchen" which I converted to store butter and ice cream churns, pots, pans, utensils, extra storage containers, foil, bags, cutlery, and other meal related accoutrement. Out back in the woods, just beyond the big pile of wood I maintain all year, (for use in an antique woodstove I keep on hand, in case the power goes out) there's even an old rusting vintage still where my great grandfather made some of the finest corn whiskey for miles. Next to it is the rusting hulk of the Ford Model A he used to transport that powerful hootch by the light of the moon on soft summer nights to his eager customers in a tri-county area. Further into this verdant forest of mostly sycamore, oak, pine and scrub, runs a cool stream into which I occasionally cast a rod or net to catch some Brook Trout, Bluntnose Shiners, or whatever takes the bait (just earthworms for the most part). And yes, hunting season means wild turkey, deer, and even an occasional wild boar. Next week, I'm planning on filing for a permit to 3-D print a smokehouse in order to be able to create gourmet artisan handcrafted, beef, bacon, turkey, and beef stick jerky, which interested local merchants can private label for other people to share with their families and their family dogs. Unfortunately, I had to break the bad news to my free range hens today that due to expected egg shortages regretfully numbered are their days of laying a couple of eggs and then basically taking the rest of the day off with ranging privileges' within the parameters of a few very nice rural acres - parts of which are rich with fat grubworms. There's even a short dirt road between the main barn and the farmhouse which they're free to cross to get to the other side as often as they'd like. My rooster Ben overheard me and he ain't too happy either, knowing full well that due to oncoming egg shortages, he'll be "workin' overtime to make sure there's plenty of eggs for the family and I.

      You can also use a cheesecloth or tea towel to squeeze out the juice from the pulp. You don't need to have a food mill.

      @@Latebloomershow I went away and Googled, and I think I will eat my berries in a tincture just by crushing and placing in alcohol like vanilla. Google said this "According to researchers, as the temperature rises, the destruction of the anthocyanin antioxidants in berries increases. Scientists found that baking resulted in the greatest loss of anthocyanins (94 percent), followed by steaming (88 percent), pan-frying (86 percent) and boiling (77 percent)"

    Very nice, I wasn’t able to get very many elderberries this season due to the heat and drought. I make this every year and throughout the year. I have not ever added fruit what a great idea. I use ginger, cloves, cinnamon, and local honey. And then cook the syrup again but at a slow heat without the honey yet! And store in the fridge. I sure enjoy seeing how many different recipes I get to see. I sure hope to get elderberries this next season. The flowers are medicinal as well. Angie at Canterbury trails farm has some tea recipes she makes with elder flowers. If I would have known we were going to have an extreme drought and heat I would have just harvested all the elderflowers. I hope you have a great holiday weekend! Thank you for sharing this.     My kids and I are always sick. I mean everymonth... I started to make elderberry syrup with honey for use. Hiw much am I supposed to take if it each day to see a difference in health???

      I'm not a doctor, but I would think a tablespoon or two? But, if you are sick every month, I recommend you try to find the source of causing this. Are you near a five gee tower? Have you had your water and soil tested? What contaminants are running down your immune system? Vit C, D, zinc and quercetin (zelenkoprotocol has a combined capsule) are very important to be taking these last two years to fight viruses. Many people are low in Vit D. Make sure to take it every day. Stay away from EMF's as much as possible. Check for mold in your house. These are basic recommendations. I hope this is helpful. Blessings.

    Kaye.....I am going to put you on to "Rose Red Homestead" on You Tube. She is a PHD that lives in Moab Utah and has been canning and preparedness all her life. She approaches and teaches all canning etc scientifically the does and don't s of canning. She is in her 70's and knows what she is talking about. Check her out!

      More than one is needed for pollination so take cuttings from your current bush and stick them in the soil. Trust me they grow. So easy to propagate.

    I'm sorry, but every time I hear about elderberry syrup, elderberry juice, elderberry everything else I can't help but think about the two maiden aunts in "Arsenic and Old Lace" who poison gentleman callers with elderberry wine and it just kind of puts me off. There, I said it. Maybe it's just me and I watch too many old movies.

      Too much of it can make you ill. I think they recommend no more than one table spoon per day.

      Poke berries suppose to have Arsenic in them too, and mommy made arthritis medicine out of it for years! That’s bull. I think what they say with it is the heat when you cook it gets rid of it someway. It’s the heat. You got to boil it. And my family has made Elderberry jelly to and mixed blackberries with it. They said it was delicious but I don’t remember eating it. Must have been to little at that time when they made it. God had to put this stuff here for some reason or it wouldn’t be here. They take something natural and galm it all up, cause they can’t patton nothing without sticking junk in it. God didn’t make it that way, then it causes all other kinds of problems, cause of all the junk in it!! Pitiful.
