Lovely video with great directions. Just a clarification though, is the anionic emulsifier to aid in wash off of product or its stability? if stability, why wouldn't glyceryl stearate (non-ionic) be a suitable choice for its low HLB?

This is an o/w emulsion - so a low HLB emulsifier would destabilise it. Yes, you could use it, it won't spread as easily through the sheet mask pack but it should work when packed and and stored for a little while.
