Two suggestions.
1st, about staining vs. adding the color to the water before mixing, I would say that the staining would not last and will require re-stain every 3 - 4 years (depending on the foot traffic, rain/snow/pressure washes). Adding the color within the cement will become part of cement pigment and will be permanent. You must add the whole 10oz bottle per 60 or 80lbs bag. You can reduce the amount a bit to get color variations but that's what Quikrete recommends.
You can also buy the gallon stain of your choice (as in your video), thin it out and then add that to the water before mixing to the cement. That would be cheaper compared to $11/10oz color bottle.
2nd, a rough wooden leveled table (3X6 feet) will take out the back pain from the equation.

Thank you! Your video has given me some troubleshooting ideas for what I might be doing wrong with my pavers. My molds are totally different, but they do have a lot of detail that I've been having trouble with keeping from crumbling when I demold the paver. Each one takes about 40 lbs of concrete, and I think I've been rushing to take them out. Now that I have more than one mold, I'll try leaving them to set for a couple of days. It's very hot and humid right now where I live in Texas, and that may be why I've had a hard time gauging when it's time to demold. Thanks again for your help.

I used the Supercizer 5 Plasticizer from Fritz Pak in the same set of molds. Canola oil for release. With the fritz Pak product the pavers just fall out with no effort. With no plasticizer it was a struggle to get the molds to release.
Did you experience anything issues with the top finish due to gravel stones in Quikrete? Any updates on how it all turned out? Please share.
Do you have a video of the results?
How did your pavers come out when you laid them in your yard? Look like flagstone? Did you just put on sand? Did you concrete between them?
I bought these exact forms they come from ukraine, I also have the same issue, it seems like 5 of 6 are perfect and 1 comes out with bubble issues or holes, what are you using to fill the holes?
Just bought me a set of the exact molds.
What would you recommend for form release?
I used plain veg oil.

I used the cheapest cooking spray I could find.
The water settles to the top because the concretes made of rocks and rocks don’t float
Does it have to be quickrete concrete or can you use any brand?
I've only used Quikrete. I would imagine any strong concrete would work fine.
Can you make a square/rectangle path with these?
Yes, you would just have to cut the pavers on the edges of the path way.
just buy an all in one mold lots of designs on ebay amazon no need to do it separately

Does cement causes taning to skin or acne
I don't know the answer to that.
It is an irritant so best advice, regardless if you have a skin condition or not, is to always wear gloves and when you are handling the dry powder (before mixing) best also to wear a decent respirator / face mask / eye protection for those few minutes because it goes everywhere.
Do these basics and you'll not have a problem, like most building materials, cement / concrete is not particularly dangerous if you take basic precautions.
