  • Fluffy sponge cake rolled up with fresh matcha cream in the middle, this Matcha (抹茶) Swiss Roll will be an instant favorite this holiday season!

    Cook Time: 12 mins
    Total Time: 102 minutes + 30 min cooling + 2 hour chilling
    Serves: 1 10" (25 cm) Swiss roll
    Ingredients:
    4 large eggs (separated)
    ¾ cup unbleached cake flour (90 g; *updated from the original 110 g in the video)
    ½ tsp baking powder
    2 Tbsp matcha (green tea powder)
    ½ cup granulated sugar (½ cup = 110 g) (separated)
    3 Tbsp whole milk (microwave until warm to the touch) - SO SORRY for the caption error!
    Matcha cream filling:
    ¾ cup heavy cream or heavy whipping cream (¾ cup = 180 ml) (chilled)
    1 ½ Tbsp granulated sugar
    2 tsp matcha (green tea powder)

    I made this for my boyfriend for his birthday. He loved it 💚 If you’re hesitant to try this out because it looks complicated, don’t worry. It’s a really forgiving recipe, and if you follow the instructions you really can’t go wrong! It comes out delicious and not too sweet.

    I tried a few matcha Swiss roll recipes and yours turned out the best. Not too sweet and the cake was soft and fluffy. I added a bit of Anko to the filling and it tasted great. Thanks for the great recipe

    This is a really great recipe. I made a matcha roll and another replacing matcha with extra black cocoa for a monochrome chocolate vanilla roll and it came out great!

    Do you have any suggestions for high altitude baking? And would this work with gluten free flour, if it were a 1 to 1?
    Update: I did the same recipe at high altitude and with Pillsbury gluten free flour. It turned out just great. I did 14 minutes in the oven instead of 13, but the cake was cooked all the way through, and did not crumble when I rolled it. Perfect.

    Thank you Nami for this beautiful recipe. Made this Swiss roll recipe the first time (no risk no fun: a new one on Christmas eve) and how should I say it:
    it turned out great. My family was totally into it. We know the matcha Swiss rolls from our livin in vietnam. It is truly as good as theirs. I used take matcha from Japan. Next time I will try ume or matsu powder.

    Thank you for sharing. I made one last night, it was soft and yummy. Please correct the measurement for the milk: 1/4 cup milk, not 2 tablespoons. Also I added a little twist to the cream, instead of using sugar, i melted 1/4 cup of white chocolate with 2 tablespoons of heavy cream in microwave , let it cool down a bit and combine to the whipping cream

      Hi T. nguyen! Just want to make sure... I used 2 Tbsp milk as my recipe said, and did not add 1/4 cup milk. As always, I tested this recipe several times to make sure the recipe works before publishing it to youtube and blog. But depends on how the dry ingredients are measured/weighed, climate (dry/moisture), and each oven condition, it's possible that ones need to adjust the recipe. Hope this makes sense. :)

    I forgot to buy cake flour and had to use all purpose flour + cornstarch for substitute, and I didn’t have cornstarch and had to use tapioca starch for substitute, and there was a lot of ratio math involved. “When am I gonna use this in real life?” I used to ask

    I loved making this and it turned out nice but I'd reccomend just a little more sugar for the filling. I even used a little less matcha and it came out pretty bitter.

    Ive tried the recipe 2 times but cake came out a little drier than desired. May I ask what’s the size of the baking tray used as it might affect thickness of the batter and the final texture of the sponge cake. Thanks in advance !

    Can you give me more tips on mixing the egg yolk batter? I found I may be over mix it, the cake turned to be quick hard. I already added a little bit more milk after pouring the matcha & greentea powder, the better is still not good enough. I tried twice, the cake is a bit hard. I can't roll it at the end as it would be cracked. Thanks for any futher tips.

    I tried it just now! I didn't have the silicone spreader and my pan's size is different from the tutorial so i ended up having uneven cake that is too thick :/
    Maybe it would be better to tell people how thick the cake batter is supposed to be before putting into oven so that people could adjust according to their own pan size! just a suggestion, it tastes great tho :)

    Hi teacher, I have a question.. that I still can't find the answer.... there's the other way to make sponge, beat yolk till light colour with sugar and egg white to peaks, then combine them together before add butter and milk (melted)... what is the difference between your way and mine? Thank you!!!
