Authentic Kyoto Matcha Swiss Roll | Ultra-Rich Jasmine Cream Recipe

    Matcha Cake Roll
    Corn oil···45g
    Matcha powder···9g
    Milk···65g
    Egg yolks···80g (5 pieces)
    Egg whites···150g (5 pieces)
    Cake flour···55g
    Sugar···60g
    Jasmine Cream Filling
    Jasmine cream···about 150g (200g whipping cream, 5g jasmine tea boiled and chilled)
    Whipping cream···60g
    Sugar···15g
    [Baking Time]
    155℃/311℉ 30 minutes
    [How to make]
    ① First, make the jasmine cream. Heat the light cream to a slight boil, turn off the heat and add 5g of jasmine tea bag. Let it sit for five minutes. Cool it over ice water and then chill overnight.
    ② Prepare the matcha cake roll. Freeze the egg whites for ten minutes.
    ③ Mix the warm corn oil and matcha powder evenly, then mix in the warm milk. Once fully emulsified, add the cake flour and mix well, followed by the egg yolks, mixing until it becomes a flowing ribbon-like consistency.
    ④ Remove the egg whites and whip them with sugar to soft peaks. Combine with the egg yolk mixture, fold evenly, and pour into the baking pan to bake. Let it cool after taking it out of the oven.
    ⑤ Take out the chilled jasmine cream and remove the tea bag, leaving about 150g. Add 60g of whipping cream and sugar, then whip.
    ⑥ Spread the cream evenly on the cake and roll it up. Chill for two hours.
    ⑦ Take out the chilled cake roll, dust it with matcha powder, and it's done!

    I am both a home baker, and graduated pastry chef in advanced patisserie and baking arts. This is an excellent recipe for both beginners and skilled bakers. However, I am surprised no one has commented on the technique used to infuse the whipping cream. I show humility in saying I did not wait overnight, but technically speaking, once you heat whipping cream, especially to a boil, it will lose its fat composition, no matter if you chill it back down or not. This results in the inability to "whip" it up once it's cold again. I ended up wasting product because it emulsifed and broke. Infusion in cold whipping is a much better approach. If you can be specific in if you used light or heavy, it might be helpful. (I made a paste with my matcha powder and a couple tbsp of cold cream then whipped it into 200g of cold heavy whipping cream. Soaking the tea bag overnight in cold cream works as well.       it worked for me tho, the cream has more of a buttery rich taste but maybe i didn't heat it as much?

      you have to divide the whipping cream into 2 parts, 1/3 of the total you infuse with tea, after that put the other 2/3 to it and chill. Good luck next time!

      Following the instructions in this video for the whipped cream works all the time with me. I use cream with 35% fat. I let a part of it shimmer with the tea for a few minutes and leave it for a few hours in the fridge until cold when i am short on time. And then mix it with the remaining un-boiled part of the cream and voila!

    Made matcha sponge with your recipe. The best. Although I substitute to organic cane sugar & use swiss meringue technique, the sponge came out perfect, soft & delicious (everything room temperature). I made matcha swiss roll with white choc ganache & red bean paste 😁.

      You could probably bake a few layers of the cake on a round pan. Put cream in between each layer. Just an idea 😊

    Why did you freeze egg whites before whipping them? in France and Italy they are used at room temperature otherwise they struggle to whip.

      Ceremonial grade matcha will give a better colour compared to culinary.

      Butter may mask the matcha flavour and the risk of deflating is higher.

      There’s 3 different flours in market, all porpose (medium protein), cake flour (low protein), bread flour (high protein). If the packaging have cake pictures that’s cake flour, same applies to bread flour, if there’s no picture in packaging just go for the description on it😊
