Small Batch Tomato Herb Jam | Grown-Up Ketchup | Home Canning Recipe

  • Kick everything up a notch with this amazing condiment. Use it to dip, baste or add flavor to your favorite dishes. You will want this versatile condiment on your canning shelf!
    6 lbs. plum tomatoes, cored and
    chopped
    1 1/2 cups of sugar
    1 t. each salt & pepper
    3 garlic cloves, minced
    2-3 bay leaves
    1/2 c. balsamic vinegar
    1/4 c. Pinot Grigio or other dry white wine
    2 t. Herbes de Provence
    Simmer to desired consistency then water bath can for 10 minutes, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Follow all instructions for your canner and adhere to safe canning guidelines.

    Thank You, Carol! Just made 6 - 1/2 pints and do keto, so used Lankanto granular Monk fruit. It tastes AMAZING while still warm (I used my finger to get every last drop out of the saucepan😁). I LOVE sauces, & my tomatoes were ready, now I can’t wait for more to get ready. It’s the kind of recipe I want all my family to try, but want to hoard my stash!!🤣

    I always get extra jars of whatever. I follow all instructions, measurements, and weights. I just consider myself blessed.

    It’s just my husband and I and I’m going to do it in the smallest jar ball has. We were at a restaurant and they were serving tomato jam with one of the other burger and asked if I could have a side of it. I was hooked! My husband said I couldn’t stop talking about it. I said I was going to make it and I know who’s recipe I was going to follow. Now I have to go and get the tomatoes and make it in between sitting with my mil. I’m salivating!

    I discovered Herbs de Provence late in the game and just love it. A little goes a long way. I like to use it in lots of my chicken dishes as it adds such a beautiful fragrance. Great video!

    I doubled the recipe. Looked like yours and I ended up with 16 half pints instead of 8. It is delicious so I am not complaining.

    I am know on my 3rd time planting. Good news plants are starting to grow. Need to tell you Fiesta brand seasoning has come out with lime pepper. It is so good. I found it at WalMart.

      kbailh01 I have to thank you... I had no idea it was also a steam canner (guess one should read the manual 🤦🏼‍♀️). I had planned to purchase a steam canner bc several have asked me about steam canning. Glad I didn’t and thank from the bottom of my heart for commenting.     Thank you so much for this video! It’s looks so yummy. If I may ask please, can something else be substituted for the wine? We rarely have it on hand so I was hoping it can be omitted, or broth/water could be used in its place? Also, may tomatoes be blanched to remove skins before reduction step???

      Lisa Turner hi! There’s just a small amount of wine so I would just omit it all together. As for the skins, I would leave them on for two reasons... 1) you don’t really notice them and 2) a lot of natural pectin resides in the skins and we’re not adding any pectin so I’m not sure the results would be the same. But if you’d rather remove them it’s worth a try. Thanks for watching 😍

    Hello - I love your videos - it’s so nice to see young women still canning. I couldn’t wait to try this recipe but my little potted garden isn’t doing so great. I only had 2 lbs worth so I used 4 lbs of canned diced tomatoes. I know it probably won’t taste the same but I couldn’t see paying $2 a lb at the store for their tomatoes. Its cooking for the first time now. I was wondering if you blend the bay leaves or you remove them before.
    The recipe sounds delicious.

    Im making this recipe today...it smells so good right now!
    I doubled the recipe and want to can it in 12 oz Ball jars.
    They are in between ....bigger than 1/2 pints but smaller than pints.
    Your direction are for 1/2 pints and I should probably process at pint time.
    Long story short...lol
    Does your recipe say how long pints should process for??

    Love this recipe and your channel! Could you help me out with the product # of the Victorio (vkp....something)? In the Netherlands it's hard to get a good deal on those products (also the ball canning books are crazy expensive). Greetings and thank you. 💕

      Jolanda Marcella thank you for watching from the Netherlands...love that! The canner is Victorio Stainless Steel Multi Use Canner VKP1130. I purchased mine from Amazon, not sure how that works in Europe. I’m sorry to hear the Ball Canning Books are expensive where you are. They’re expensive on Amazon as well. I do share a lot of canning recipes from Ball Canning books if that’s any consolation 😉. 💕Carol

      Tammy Dudley there really is no substitute. I would just add an equal amount of water so you get the same consistency 😊

      @@mareebone3488 I always find that wine or a liquor adds flavor that you can’t get any other way. So it will be a bit different in flavor. If you don’t want to buy a large bottle of wine try the mini bottles in a pack of four. They are usually the perfect size for a recipe 😊

      Sara Omer the adjustment table is listed in the description box below each video. If you are below 1000 ft your canning time is the same as mine 😊

    I was just about to make your recipe for the tomato jam. However, I find that I don’t have fresh basil but I do have dried basil, can I use that instead. Also, how much of the dried basil should I use?

      Irene Odell hi! There isn’t any dried or fresh basil in this recipe. The only spice I used here was 2 teaspoons of Herbs de Provence ...

      Opps, I was looking at the wrong recipe. I made your recipe yesterday and got the four eight ounce jars with just about three tablespoons left over. I made a mistake when and how to add the ingredients. I actually added all the ingredients except at once and lastly the wine. Instead of the screwup it came out delicious. I also used the immersion blender which really smooth out the jam nicely. The little bit of leftover which was about 3 tablespoons I had most of it for lunch today on chips with avocado. Sooo good. I will make another batch. Thanks again for replying so soon and an excellent recipe.👍👍

      Heather Keller holy cow! Heavens no, do not buy it from Amazon!! That’s crazy! I purchased mine from my local Meijer and it was less than $20. Google it for other places to purchase it. You should be able to get it most places canning products are sold :)

      I saw that on Amazon and Ebay was more than that, I found mine at our local Barnes and Noble, I looked it up online and called the store and they held a copy for me. It was about $22.00 that included tax, you can also check on Facebook Marketplace or Mercari.

      Always shop price outside of Amazon. I am noticing all to frequently that Amazon is seldom the best price and more often that is so much higher that many other brick and mortar or online sites. I have stopped shopping at Amazon as a result. We have been lulled into thinking the giants like Amazon and Walmart have the best prices. This is simply not true and there is always a cost for “free shipping” as well.

    I just came back from Amazon looking at this canner. Reviewers said that the one with the large O at the end is a knock off brand. Do you know anything about this?

      Tanya Perrin I’ve not heard that but I just checked the Victorio website and a few other trusted websites and the picture is the same with a large O and about the same price range. What I can tell you is mine has the large O at the end and works perfectly. It’s all stainless steel and stamped on the bottom with the Victorio logo and well made. If it’s a knockoff I don’t mind bc of the performance. I just want what works and I honestly don’t care who manufactures it 😉. I guess everything is buyer beware these days.
