您好,🥰💖麵包揉成膜,通常意味著麵筋形成到一定程度了。這樣做是為了讓麵包的筋度高從而膨發力更好,麵包組織更加細膩。不是所有麵包都要揉出膜。吐司对于面筋要求高一些。普通甜麵包來說,特別對於家庭手揉,出到厚膜也是足夠的。這樣的狀態,我一般手揉8~10分鐘。木材麵包麵團比較乾一些,也是揉到厚膜即可。時間參考這個就行。

老師,今天做了這個包,最後唧沙拉醬出爐后變了克色,不似老師你做黃色,請問你用甚麼沙拉醬呢?
您好,我用的是買的比較黃色一些的mayonnaise,醬顏色不同,這個對於麵包味道不影響,只是顏色會有些區別。這個醬我自己也常常用蛋黃來自己打發,可以打顏色黃一些,很簡單,因為最近問的朋友多,以後有機會我會展示給大家,很快就幾分鐘就打發好,比去超市買還快速些。🥰💖

您好,我家大部份情況下,我的沙拉醬就是自己用蛋黃,和食用油自己打的。超市裡所有品牌的mayonnaise蛋黃醬都可以買來用,味道區別也不大。🥰💖

您好,放冰箱冷藏水合,讓麵團自動形成一些筋度。後面揉麵會比較好揉出麵筋。🥰💖

. 好整出嚟 面皮會爆
接口需要放到最下面壓著就不會爆開。
