Made this almost 1 year ago. Sampled it after bottle carbonating and stuck it on the shelf where it sat until this past Easter Sunday. OMG did it age well! Thanks for the great recipe. I can’t wait to make a bigger batch.
I have to try this! I love to bottle carbonate mead and cider, the first I tried was the crisp hydromel from Doin the most. Before bottling I let my mead clear as best as possible, rack, add erithritol and priming sugar, which also degases the mead quite a bit. I then add a tiny amount of EC-1118, about 0.1 gram per gallon. This results in a minimal and very compact yeast cake on the bottom, so you lose almost nothing when pouring carefully from the bottle.
Genius!! This will be my project during the holidays. Question: If you are going to force-carb, I'm assuming you: 1) stabilize first 2) add the juice concentrate 3) put mixture in keg 4) let the CO2 do its thing 5) enjoy Right??
I love that you bottle age. That's the way homebrewers will mostly do it. I wish that you don't follow "doin the most" with adding all kinds of things. Half the fun of being a homebrewer is to not having to worry about any chemicals at all :) At least, I as a homebrewer would like videos without white powder. :D
I totally understand! It's very okay to not want to put any chemicals in your mead. The good new with this one is: the only thing I added that was remotely close to a white powder was acid blend. There are lots of roads to the same destination!
Love this idea! It's been a while since I've done a carbonated mead. Need to do one soon. This would be a good thing to have on hand for the summer! The initial foaming is probably CO2 degassing from the sugar introducing nucleation points. However, the yeast really do get happy quickly when you introduce new sugar. I just had to add more priming sugar to some barleywine I had bottled (I probably mismeasured originally, and I was shooting for a low carbonation, so not afraid of bombs). Also added some more yeast on top of what I added at bottling. Just a few minutes later it was foaming up and forming a new krausen.
Did you add any nutrients? I know you usually do, but maybe you didn't need to because EC1118 is such a beast and you're not coming close to its max abv?

I have made at least 50 gal of mead, when I drink even just 1 glass it is like I am taking a laxative, plus I get gas bad it taste good but the side effects is real bad how do i fix this thanks have a merry Christmas
I know this is an old video, sorry. But can I carbonate my mead with a soda stream and add orange juice to it? I don't have a champagne flute glass tho, just plain white wine glasses. My traditional mead i have in the fridge is still.
What kind of sugar did you use from Priming? Also, in the video you say 26 grams of priming sugar, but in the recipe in the Description it says 28 grams. which one was it?
In my experience, orange juice has a rather odd taste when fermented after the primary. It’s just too vigorous of a fermentation and the secondary is a little less vigorous.
@@GreenWitch1 I would definitely add the lime juice in the secondary... I would think the mint would be best after the juice. That's mainly so you can control how long it's in the mead. I would say just add a small amount of ingredients and then see how it tastes - add more if necessary!

That's the way City Steading does their meads. I appreciate watching both the natural and modern techniques and deciding what works for me.

You can - but it will only hold for a few hours. You're going to oxygenate your brew big time if you do that!

Why 50 days? Could the OJ concentrate have been added as soon as the trad fermented out?
I was just lazy! It finished after a few weeks and I definitely could have added the OJ right after the primary

Nope! I didn't stabilize them at all!

I have and it turned out to be pretty interesting! Most of the cinnamon that was whipped into it was lost in the fermentation process though...
