Not one I have perfected, but, if you are avoiding the meat substitutes I would try this; Use tempeh- crumble it and steam it (helps make it less bitter) saute and season with fennel, a tiny bit of soy sauce and some of the italian spices, pulse it with some white beans in a food processor then use that as your base, I would add some tomato paste to that too.
This is definitely what’s for dinner tonight!
