Oooooooh egg sandwiches! I love a good egg, mayo, and spring onion on really fresh white bread sandwich. I was in London last week and had an amazing sliced egg, anchovy and salad leaf sandwich on a malty brown.
Yum one of my favorite sandwiches. Sometimes I will add little cubes of sauteed pancetta to mine with a few sliced scallions and tiny bit of lemon juice.
Rather than using a masher, I use an egg slicer first one way, and then a quarter turn and slice again. By the time I have mixed the ingredients with a dinner knife, I find the texture just right. I often add chopped tomato to my mix, but make sure that I remove most of the seeds as they just make the mixture sloppy.

We don’t butter our fresh bread here in the USA for an egg salad but a smear of really good mayo, like Duke’s and a bit of mustard and of course, salt and pepper is perfect.

That New York deli egg salad sandwich looks incredible. Love the classic simplicity of the recipe. I'm definitely trying this for my next brunch. Have you experimented with different types of bread? Or maybe adding some chopped avocado for a healthier twist? Would love to hear your thoughts.
Salads are easy to make and cheaper than the supermarket. Plot twist. You can give it your own taste ! In a tuna salad I prefer some red bell and chili powder, but in an egg salad I prefer some curry (masala) and Surinam sambal for taste.
Mmmmmm , I love egg anything especially a well made egg sandwich . The only thing I would change here is thinner slices of bread otherwise I would have a right mess all over myself lol 😝
Disgusting. I worked at a house to fix plumbing and I thought it was a sewer leak. Nope...egg salad sandwiches. The plumbing problem was sediment in a shower head. Fowl for a reason. Soggy fart sandwiches

Wow, only ten minutes and put it in cold water to stop cooking ? Might add a couple minutes to make sure eggs cooked.
Eggs are 100% cooked at 10 minutes. They can go for 12 but I don’t recommend anything past that
