    I read that marinading meat for 24 hours makes it mushy. I guess that's not the case here?

      I’ve never experienced that. But who knows. So many factors play in. Type of meat? Cut of meat? Style of cooking? Acidity of marinade? Who knows what’s could cause that but it didn’t happen for me on this one.
