Traditionally, here in the Carolina appalachians, hogs were run in the woods and grew on acorns and hickory nuts. Mostly they were killed in fall and cured as ham and salt pork in barrels, but the cold mountain air let them make amazing slow cured hams, smoked and unsmoked, in a similar process to this. If you are lucky enough to find a local butcher shop or someone from a family that has always raised hogs, they will often have a special "old country style" ham which is cured for a year and develops a "rind" like these. They are amazing and delicious but often not appreciated by outsiders... yet they are so similar to what is shown here. Who knew a tradition that seems humble and quaint shared so much in common with something so fancy? Makes me proud of our food culture.
I've had the privilege of eating this ham several times (coincidentally, I have a small pack in the fridge now). I just try to get it when I see it for sale, especially since it's almost impossible to find in Canada, where I live. Absolutely the best ham in the world. It's pricey, but I do think you have to try it at least once in your life, if you're a fan of ham. Nothing really compares.
We were in Canada for vacation and saw a leg or two for sale at the St. Lawrence market. Didn't get to try the Iberico, but we tried a few other things there. I can only imagine the taste.
It feels like a blessing that I grew up with this stuff. My step family is Spanish and pretty rich but they treated my like their own even though I'm from another country. We would always eat the highest quality Iberian Ham and the taste feels close to home.
I've had black label Jamon Iberico and I can confirm that it's stupendous! It melts in the mouth and it has a unique flavor. You have to try it. The green label is also good. Haven't tried the other ones yet.
This process is called "dry rendering" and it turns even the worst cuts meat into something divine. As humans we are looking for flavors that indicate easily digestible protein chains, and fatty carbohydrates. Dry rendering essentially concentrates these 2 flavor and breaks down the complex chains into simple chains. You can tell you've done it properly because the meat will be a deep crimson from trapping all the exposed hemoglobin inside the muscle tissue. Literally any meat could be this wonderful, but spain is the only ones who get this. It is not functional or healthy to eat meat like the US does but we do love our $4 burgers. America is the reason America can't have nice things. This whole country could learn a thing or two from "dopamine restriction". Enough rant. Looks divine.
Bro, we have some good meat here too. We have all kinds of meat for all kinds of people and budgets. We don’t cure meat, but we do have our own cuts that are good in their own right. In Spain this is probably our most valued food. Not only in terms of price but in terms of flavor and culture. It is quite usual to buy a leg for the family during Christmas and good firms typically send a basket of food products containing a paleta. Indeed it is becoming pretty common to have a person cut a ham leg for the guests of a wedding before the actual feast starts. Little advice: Do not tell Spaniards you do not like it or you will be treated like a weird person.

My auntie brought this for us from Spain, it's absolutely delicious!
Before eating take it out of the fridge to get room temperature.
Tried it a couple years ago. I was buzzin and I still remember it being amazing.

Imagine if this was done to pork 🧠
Bro, we have some good meat here too. We have all kinds of meat for all kinds of people and budgets. We don’t cure meat, but we do have our own cuts that are good in their own right. In Spain this is probably our most valued food. Not only in terms of price but in terms of flavor and culture.
It is quite usual to buy a leg for the family during Christmas and good firms typically send a basket of food products containing a paleta. Indeed it is becoming pretty common to have a person cut a ham leg for the guests of a wedding before the actual feast starts.
