ESQUITES WITH HATCH GREEN CHILE: Delicious Twist on Mexican Street Corn/Elote en Vaso

  • If you love Mexican Street Corn, you've got to try this easy recipe for Esquites with Hatch Green Chile. It's a delicious twist on what is often called "Elote en Vaso" or "Corn in a Cup." It's packed with so many complimentary flavors, you will love it as a side dish or on its own. Read on for how to make it.
    Esquites with Hatch Green Chile
    4-6 ears of corn (I used 6)
    3 Tbsp. unsalted butter
    1/4 cup chopped red or white onion
    2 garlic cloves, minced
    1/4 cup Hatch green chile, chopped (or 2 jalapeños)
    1/2 tsp. salt
    equal parts Mayonnaise & Crema Mexicana (I used approx. 1/3 cup of each)
    crumbled Cotija cheese
    fresh lime wedges
    red chile powder or Tajin
    Use a serrated knife to cut the corn kernels off the cob. Melt butter in a large skillet. Add in corn kernels, cover with lid and let cook five minutes without stirring. Uncover and mix. Add in chopped onion, minced garlic, Hatch green chile and salt. Stir and let it continue cooking another 5 to 10 minutes, until corn is fully cooked. Remove from stove and place in bowl. Let cool 10 minutes. In separate bowl, whisk together mayonnaise and Crema Mexicana until smooth. Pour desired amount over corn. Add desired amount of Cotija cheese and mix to combine all the ingredients. Serve with fresh squeezed lime juice and either red chile powder or Tajin, and enjoy!

    I was born in Albuquerque, only lived there a year and have spent my life in Texas, and I so love green chiles. Every year during green chili season we get roasted green chiles. So good. Your corn recipe looks delicious and I will be making this. I enjoyed your video you do a very good presentation . I have made green chili stew which is a New Mexico dish I believe.

    Thank you. You had me when you were cooking the corn, peppers, onions, and garlic in your skillet. I would have eaten it right out of the skillet without the sauce. Yum 😋

    My kids love this! Whenever we go to El Paso, they gotta have one off the street! I raised little El Paso kids!! They love corn in general, I think they get that from me... great job, nice onion!

      I didn't grow up eating this at home in southern NM, either. I only had it when I was older. It must have taken a while for it to make its way this side of the border. Now, my mom says no local fiesta is complete without it. We all love it.

    Love watching you cook. I live in Missouri and can get only Anaheim peppers. Good substitute but discovered Hatch chilies when I visited my daughter her husband at El Paso. She was in Army Sargent Major School. Love this corn recipe you are making.

      Nuevo Laredo Mexico, corn on a stick, roasted, dipped in sauce, chili powder on outside, served in a cup. Also pinto bean soup with tortillas.
      Buda, TX, looked much like yours, served in a cup at my nieces volleyball games.

      My wife's family is from the Rio Grande valley, and I have lived all over Southern California, Arizona, New Mexico and Texas. "Esquites," this is new to me. And I ate street tacos in M de F, C. Juarez, and Chihuahua. How come I never heard of esquites?
      Anyone can find all the ingredients, just look under mercado. La Plaza, La Michocana or Fiesta are the local markets. Wal Mart also has everything on the recipe. Hatch Chiles? When in doubt, more is better. Huevos, tamales, papas, frijoles, me gusta con Hatch chiles.

      Scooping this up with tortilla chips is definitely a good way to go. I definitely wouldn't turn down a quesadilla, either. I think you'll love this any way.

    Marcy, i know you just did the esquites, but could you take us through your method for elotes entero. I know its very similar but i much prefer it over corn in a cup and would like to see it prepared so I get it right.

    That red onion looks like a leek. Did you plant it from seed? Maybe the seeds were mixed up. Once I had a leek that got old in the fridge so I put it in water to get the roots going, then put it in soil, and it grew a flower just like that. I took a neat photo, on a black background. Well, maybe they just flower similarly, too. :) We used to eat corn and squash tacos, in fresh corn tortillas with queso fresco. This reminds me of that.

      Oh wow! I planted mine from an old onion that had sprouted a root in my refrigerator. I just took that and stuck it in the soil. (It flowered so beautifully, I can see how that would make a beautiful photo.) Mine was definitely a red onion, it just didn't look like one when I pulled it out. It tasted really good, though.

    I'm from Albuquerque and I'm a big Hatch Green chili. What I want to know is what does the whaquio cheese taste like. I have never had any Mexican cheeses. I've had Parma and I don't like the smell. Can you please help me

      I may be wrong but I think in this recipe she is saying Cotija cheese. If that is correct, I think the taste and texture is very similar to feta cheese used in Mediterranean cooking. They both have a salty and slightly pungent taste. The Cotija dissolves on your tongue much faster than feta.
