Bread is terrible for all birds especially waterfowl. It can hurt them really bad, and possibly kill them. I hunt them but i still respect them and I actually have some as pets. Best thing to feed them is veggies, grass clippings, they go crazy for watermelon, and dried meal worms will have them running up to you every time they see you. Meal worms are like crack to them. But if you really care about them please stop with the bread. Like i said this goes for pretty much all birds.
I use this guide to call them into my backyard so I and the grandbabies can feed them cheerios... love this guided explanation.

is it possible to trick them into flying away ,when they are on the ground feeding, to prevent them from shitting all over everything?
Go somewhere else and find your own food. I played this and about 4 of them got back into the lake and swam off 😭😂
