I am an herbalist and forager and absolutely love to share what I do with others. There is FREE food all around us. Good nutritious and delicious wild foods!!
In this episode of Wild Eating With the Forager Chick, we will forage greens, flowers and I was given a special wild food. Lions Mane!
Here is the recipe for the
Lions Mane +Potato Wild Greens Pancakes
8 ounces lions mane mushrooms, chopped small
oil for cooking
1/4 onion diced
2 large garlic cloves, minced
3 cups assorted greens, chopped small to make about 1.5 cups
I used chickweed, cleavers, spinach and chives
1 tsp. pink salt
1/2 tsp. pepper
2 large russet potatoes grated
1/2-3/4 cup panko breadcrumbs
2 eggs
Cook the mushrooms, onion and garlic in a bit of olive oil for 8-10 minutes. Remove from heat and add chopped greens. Mix well.
Shred potatoes, rinse, squeeze out water and add to a large bowl. Add in mushroom mixture plus salt, pepper, eggs and start with 1/2 cup bread crumbs.
Mix well and form into patties - mine made 9 hefty patties. Heat oil in cast iron skillet, medium heat, cook patties 4-5 minutes per side. Drain on paper towels.
