I have next to no fresh veg in the fridge and as we're in lockdown I've been trying to put off going shopping for a few more days but this has just swung it - I WILL have a Wagamamas tomorrow and it will be a pleasure to cook it!!! Very good question, I just googled and they say you can do lime juice or rice wine vinegar with brown sugar (just fyi tamarind paste is easy to find in asian/Indian Pakistani shops)
I think it's a vertical bar, not an "I" - same as used in the video title: "wok from home epiode #3 | vegan yasai yaki soba". I just realised they spelt "episode" wrong!

Japanese worcestershire sauce, it's more fruity and similar to a brown sauce but has it's own distinct flavour.
