This is my family's 140 year old french onion soup recipe: Get your biggest dutch oven and put all this in it: 2 pounds yellow onions caramelized for 3-4 hours enough butter to saute your onions just enough flour to thicken your soup beef broth enough to cover your onions with an inch to spare EXTRA DRY VERMOUTH (about 1/3 of a standard bottle TO START, but you will end up using 1/2 if not all of it)

Cut my finger and got to spend time getting stitches done. I put blood and tears into making this. All I can say it was worth it.
Try not to cut yourself when slicing the onions, will reduce the amount of blood that ends up in the soup. You may want to try safety goggles to reduce your tear spillage as well.

Use a good quality or homemade vegetable stock and it will still taste great, albeit not as good as the beef stock. I’d caramelise the onions for longer than babish did though, his weren’t nearly dark enough. I’d usually cook the onions on a very low heat for 2 hours

Thanks for the recipe! I just cooked it for my mom in mother's day and it was really good! I actually used whisky instead of liquor but it worked just fine, and i used grana padano and not gruyere. I don't know if the cheese was supposed to float like it did in the video (it looked like it did) but in mine the cheese sank and actually added a lot of flavor and cheesiness to the soup, a surprise, to be sure, but a welcome one. Yoruichi Shihouin as someone who is not a fan of onions but loves french onion soup, caramelizing onions really takes the bite out of onions and makes them super yummy. And if it still isn’t your thing you can always load it up with cheese 😂
I don't like them raw/barely cooked, but the flavor of a good french onion soup is amazing. When I was younger and couldn't handle the onion texture I'd basically get some and drink eat the cheesy part and drink the broth after, leaving a big pile of onions behind.
I like to mix the gruyère with a little bit of mozzarella, because it gives a really nice stretchy, melty texture a little more substantial than the gruyère alone.
After listening to TAZ Amnesty months ago I really wanted to make this soup. I finally got around to making it today using this recipe, and it did not disappoint!
my favorite tip for cutting onions: put the cutting board on the (cold) stove and turn on the hood/vent fan (the microwave one works fine, too if it's over the stove) and cut your onions under it. it doesn't seem like it would, but it makes all the difference in the world. no more (or way fewer) tears.

Something I like to do whenever I make french onion soup like this is spread the top of my croutons with dijon mustard before topping with cheese. It adds a nice hint of tang to cut through the richness of everything else.

It was originally made without the beef broth. I think that you can get some really amazing flavor with just onions and aromatics.

You can make really great vegetable stock by roasting your aromatics and other veggies before putting them in the water to simmer.
probably shouldve caramelised the onions until they're waaaaay darker: that's how you get the deeper, richer flavours

The secret to not crying while cutting onions, don't get too attached.
An other secret is not keeping your eyes right over the onions cause the sulfur raise. Lengthen your arms to take a little distance.

my favorite tip for cutting onions: put the cutting board on the (cold) stove and turn on the hood/vent fan (the microwave one works fine, too if it's over the stove) and cut your onions under it. it doesn't seem like it would, but it makes all the difference in the world. no more (or way fewer) tears.

someone once said that i look like the sort of person to not know how to caramelize onions and nothing has ever cut me deeper than that.
Something I like to do whenever I make french onion soup like this is spread the top of my croutons with dijon mustard before topping with cheese. It adds a nice hint of tang to cut through the richness of everything else.

Been eyeballing the recipe for a while. Tried it once a year ago while guessing the proportions and totally ruined it by rushing it. Just tried again slowed things down, and it is just amazing. Not only is it delicious, but I'm kinda proud to have redeemed myself on this one.

Man, this recipe looks great. This is my absolute favorite soup. I'm glad you didn't skimp on the cheese. The big crust of roasted/melted cheese over the hot soup is the best part!
