Strawberry goo! Love it! Strawberries & cream really is the best summer combo! :)

1/2 cup granulated sugar (which is american caster sugar)
1/2 cup softened unsalted butter
1/4 tsp baking soda
1/4 tsp vanilla extract
2 large eggs (free range or farm fresh are best!)
1 1/2 tbsp whole milk
2-4 tbsp strawberry goo
bake at 340 F for 20-22 minutes
FOR THE FROSTING:
6 tbsp softened unsalted butter
3/4 cup +3 tbsp sifted icing sugar

You are my inspiration and I've learned so much from watching your videos. Thank you for all the time and dedication you put in each video. They are amazing. :)
OMG!! This looks so yummy! Can't wait to make this!
Made them today, and they were Amazing!! ❤
Very rich and the strawberry goo was an excellent addition to the batter.
Loving your recipes and your personality, you're just full of positive energy :)
Thanks for this recipe Jemma. I decreased the amount of butter and sugar in the cupcakes, and I found the buttercream was far too sweet so I had to cut it with fresh lemon juice. I managed to just about frost 12 cupcakes. Made these for Mothers Day, and my mum really liked them. The cupcake was light & fluffy. Thanks again!
Oh my gosh!!! Strawberry goo! I've been making my strawberry cupcakes with this stuff for years! You will never get a better strawberry cake with anything else. I will just make extra and keep it in the fridge and eat it on toast or dip cookies into it. So freaking delicious!
Something else to add to my list of favourites, never added cream to buttercream before or made strawberry goo, look really good. Thanks Jemma.
OMG!! Jemma! I just made strawberries and cream cupcakes and I made margarita cupcakes and cookies and cream Oreo cupcakes 3 days ago. They're all AMAZING. This one is my favorite and I can eat them all!! Thank you for sharing the recipes! I'll definitely try more recipes from you!!

I've made these as cupcakes before and they were delicious! I was wondering if I could double the recipe for two 6" cake pans?

Hi Jemma
Is the whole milk u added into the icing is "heavy cream" instead.
I'm from AUS and I got a bit unclear
pls let me know
cheers
Absolutely love watching you!!!!
Made these the other day and within days, they were gone! My parents loved them
these are delicious cupcakes. we used swiss meringue buttercream with the strawberry goo swirled in and oh my gosh, yummy!
Yum! These look wonderful! High Tea anyone?!?
I've always used much more milk in my cakes. Does that change the texture at all? Is that what makes it a sponge instead of a cake or is that just a difference in verbiage?
These are so incredable
I just bought some local strawberries, perfect timing, Jemma!
Thanks
Love this!!!!!
Am I the only one completely in love with Jemma?
Love this recipe!
They do look delicious!
This looks so yummy!

So delicious!!!
I literally just made strawberry cupcakes and orange cream cupcakes last night. They are delicious, if I do say so myself, lol
Delicious!
I MUST try these!! I came into Crumbs & Doilies on Tuesday because i've wanted to come for so long! I travelled down from Leicester and just had to come in! I saw you but was too nervous to say hi! ☺️❤️
cupcake jemma that looks yummy
I just made it and they were the best cupcakes I have made before. So moist! The only things I would change next time I make it would be 1) mix in more strawberry goo to my batter, 2) decrease the amount of sugar in the icing and 3) maybe dribble the strawberry goo on top instead because I really like strawberry goo and mixed in too much. The consistency of my icing became too runny as Jemma had warned.
It lookś delicious:) I just today made strawberries muffins, but I must try this too:)
Girrrrlll....Made these today and my family went crazy!! Thanks!! But it only made 10 cupcakes!!
That was beautiful
holy shit😍😍 i love your channel you're my motivation for eazing😂
i made this cupcake but with the goo recipe in your book which uses 110g of sugar and it tastes jammy and delicious!! i also used your swiss meringue buttercream recipe for icing on the cake. it was a-ma-zing. the only thing that i would change is to decrease the amount of butter in the swiss buttercream but other than that, i am no longer going to use american or british or the stiff and sweet icing no more
I tried the cupcake today and it amazing, especially the strawberry goo, my kids loved it so much and have 3 straight away. I think it a bit soft, can I change self-raising flour to plain flour and how much plain flour do I have to use?
Jemma I love your videos! 💕
Jemma I am getting my first stand mixer and I was wondering if you would recommend the kenwood kmix as I know you have one? Also if I get one would you reap commend a glass or stainless steel bowl? Thanks 😋
Do we need to wait for the strawberry goo to cool before we add it to the cupcake batter?
Love you jemma😍😍😍😍
I'll be making this for next week.
Love this vid!!!!
I love it💝
Love love your recipes have you ever made peach goo or lemon goo
hiya! lush recipe, loved making them, and they tasted sooo good! What piping nozzle did you use? :]
Could you show how you do your eyeliner? I really love it 😍
This recipe I am making for my Husbands Birthday and doing an afternoon tea so wish me luck! I love all her recipes and have been watching most days!! what would be nice is if Jemma said whether something could be frozen or how long it keeps for then I was wondering if I could make the maltesers cheesecake and freeze it as I don't want to do too much cooking on the day x
love it!!♥♥♥♥♥
Love it
AWESOMEE🤩🤩
this looks so so good! Unfortunaly it's winter here in Argentina so I'll have to wait to get some strawberries, but definately I'm going to try this! you are gorgeous and your accent somehow makes it look even yummier (? that doen't even make sense lol
looks yummy
Can I use stork instead of butter for the butter cream as I do in the actual cakes?
It looks so delicious!!
Please make tiramisu^^
Hi Jemma, i've been meaning to ask this for a long time... i've noticed among all bakers online that i'm following, you're the only one that put everything all of your ingredients (except the milk and vanilla) at one go and mix up the batter. while most of the bakers use to cream first the butter+sugar+egg then slowly adding the wet and other dry ingredients. Is there any big difference in the batter or the cake itself? thanks in advance!
donna lou Good question!!!
CupcakeJemma
It's essentially the same thing as long as it's wet ingredients first then the dry especially in this case it's whole egg in the recipe and there's butter plus bunch of rising agents so imho it's not necessary. Of course you can beat the butter&sugar alone to cream it thus holding more air and gives a fluffier overall texture. Arguably you can even separate the egg whites and beat it aside but i don't think it's gonna make a noticeable difference as it's not something like an angle food cake or a chiffon which relies on the egg whites too hold the structure.
The main purpose of creaming the butter and sugar together is to create more air in the batter to ensure the cake will rise and be fluffy. Since Jemma is making cupcakes (small in volume), and she is already using self-raising flour and baking soda, it is not absolutely necessary to cream the butter and sugar. You will notice that she uses the creaming method when she is making bigger cakes like layered cakes and pound cakes.
Made this today, it only yield 9 cupcakes. The cake is great, need to work in the frosting. Thanks for the recipe!
