Fairly new to these videos but I have to say my baking has improved 100% I used to put more butter in to stop them drying out but now stuck to the recipe and beat the mixture until it’s light and fluffy and omg what a difference thank you so much, everything you make looks amazing why are you so slim 😆

With the house in Portugal we had a lemon tree 🍋 , I think I made a dessert with 8 lemons. Even thou blueberry is a superfood. I think I would have a completely lemon cupcake 🧁. I thought you would soak them like a lemon drizzle and candied lemon. I love that you fill them with lemon curd. I have been wanting to do like a earl grey smoked sponge with a smoking gun. Everything always looks amazing.

She said 1/2 teaspoon baking soda and the recipe calls for 1/4 teaspoon, I would love to know which it is because I make the goodies that her and cupcake Jemma make which is absolutely fantastic

I use the correct ingredients and scrape the bowl, but I can never get 12 cupcakes that rise to level with the top of the muffin case. Either all small or fewer full ones, what am I doing wrong? Edit. Solved, I’m using 4cm deep muffin cases, not 3cm deep cupcake cases🤦♂️
Question: I've always heard that you have to be careful not to overmix your batter, or the cakes will come out tough. How do you add last minute ingredients to a batter that's already been mixed initially, without the danger of the batter becoming overmixed?
It's all to do with timing, so the initial mix leaves you with an under-mixed batter. When you add things at the end and mix, that mixes the batter to the correct point - at least I think that's how it works. 😅
Notice that the mixing time is very short. I believe they have another video where Jemma shows how different timing (and differences in dough, e.g. butter softness) affects the texture.

Made this recipe today and I don't know what happened. My cupcakes sunk in in the middle and the cake was very crumbly. The recipe says 1/4 tsp baking soda but you say 1/2 tsp in the video. I did a 1/2 tsp. Which one is it? They tasted amazing still but didn't come out of the wrapper so good. I will most certainly try this recipe again though.
I have noticed that it does not mention salt in the written recipe attached also Sally says ½ tsp of bicarb of soda & the recipe says ¼ tsp, which is the correct quantities & should it have salt?
I’ve made these twice now, and while they taste amazing, the cupcakes don’t turn out soft and springy for me. I think it’s the lemon juice, as I’ve had this issue with other lemon cupcakes... or I’m just really stuffing them up? Either way, they taste great.

Fold your last minute ingredients in with a wooden spoon/ spatula !

if you dont have SF flour can you use All purpose Flour and therefore put more soda or baking powder like a combo of those two in the batter?
