    Lamb Neck Chops with Gravy in an Instant Pot
    Ingredients
    • 1.5kg of lamb neck chops
    • 1 large onion chopped
    • 1 tablespoon dry rosemary
    • 1 tablespoon garlic powder
    • 1 tablespoon black pepper
    • 1 tablespoon or more low sodium salt
    • 1 tablespoon dark soy sauce
    • 1/2 cup all purpose flour
    • 2-3 cups beef stock
    • 1/4 cup oil for cooking
    Steps
    1. Pour hot water into the bowl with neck chops
    2. Let it sit for few minutes then drain off the blood water and dry the chops completely
    3. Season meat with salt, pepper, garlic powder, rosemary and flour
    4. Season both sides and leave it aside for few minutes
    5. Add oil to the pan and start browning the meat on both sides
    6. Transfer them into the pot of an Instant Pot
    7. Add onions to the pan and sautéed for few minutes then add a bit more oil then flour
    8. Cook flour for few minutes, add beef stock and soy sauce
    9. Keep stirring and when it starts boiling then transfer the gravy to the pot with the meat
    10. Set it to pressure cooking option and let it cook on manual for 40 minutes
    11. Serve hot with your choice of sides, mash potato and steam veggies.
    12. Enjoy!

    This looks so good! Just wondering why we soak the lamb necks in hot water before seasoning?

      Hi Wylie, thank you for your query. I soak it in hot water to release the blood and impurities. If it was cooked in a soup I wouldn’t do this method as I can skim out the impurities of the meat when it’s boiling and in the process of cooking. I also would do it with cold water and let it sit for a bit longer and the water will turn red from the blood of the meat releasing but I do it with hot water because I’m browning the meat then cook in gravy afterwards.
