I use watermelon scooper to hollow the eggplant, tomatoes and/or white squash (actually light green). I start with the small and and complete it with the larger side, It makes the task much easier. I thought I new it all but hats off to you Mr. Yousef I learn new things from you. 👏🏼👏🏼👏🏼

The most magnificent looking delicious Persian Dolmeh I have seen before. Back home for me, which is almost 45 years ago, my mom and grandma did make this amazing dish. So lovely and memorable. Thank you maestro Youseph for bring these amazing dishes into our homes. We love you and we need you.
We made this recipe without yellow peas or mint and handful of uncooked rice and way more hurbs, very little sauce to prevent from burning and put the rest of the sauce at the end on top when is finished cooking. Your version looks good too.

The onion is a fantastic idea, Thank you! A family friend who loves our Persian food and pops in often (unannounced and normally at dinner time 😂) cannot eat aubergine as her lips swell so I’m definitely going to try out the onion for her!

Mr Yousef quick question. I Use dry herbs from golchin and other Persian brands but I always rinse them a few times. Some people I know they don’t rinse it. I was told the herbs are washed before drying process. Do you know anything about that?

We also make it with onions. I thought that was common everywhere in Iran.
In my family we make dolma only with lamb and wrap it in grape leaves, but yours look sooooooo good, I must give it a try, thank you 😊
