Your left knee "keeps doing that" because you put too much weight on it. Try staying attached more firmly to the bike with your right leg. Then you can relax the left leg more.

Are you on your rear break while doing the turning? For my regular riding I learned to make the bike "pull" from the rear break when doing a U-turn for example to be more stable so I was wondering if you do the same for racing?

youll lowside if you use the rear brake at more extreme lean angles, that only applies when you're practically upright doing basic slow maneuvers
