    I made these today and BABY LET ME TELL YOU!! perfection!!! you guys never ever steer me wrong. I'm throwing all of my other yeasted waffle recipes in the trash. this is the best one, hands down. I ate two whole waffles like a fatass and I shall bask in my fatassery with pride. they're so good and light and airy. thank you for sharing this gem.

    I just want to thank you guys for this recipe. There is a local spot that sells waffles and I always wondered how they got them so light and delicious. I ordered the malt on Amazon and got it the next day. It was fairly cheap I got 1.5 lbs of the stuff for around 10 bucks. Used Bob red Mills whole wheat pastry flour and they were great. Better than the local cafe if you ask me.

    I recently spent about $200 on a top quality waffle iron, because, yeah, I love waffles that much. I’ve made several recipes over the years, and this recipe is my new favorite. It makes a very light and crispy waffle, unlike any waffle I’ve had before. Had to order the malt powder online, but it also adds flavor and was worth it. Ben really hit the ball out of the park with this one.

    Okay. I tried these again and they are the bomb! I made them in my Belgium and m;y mini waffle maker and it turned out great. It also freezes extremely well. Make a double batch and freeze instead of buying frozen waffles from the grocery store.

    Just tried this a while ago, good recipe. I did a rough measurement cause my weighing scale can't measure as accurately but it's really good. Added some extra vanilla extract😁 Oh I didn't add the malt powder either and I let it rest for 2 hours. Really fluffy but not that crispy, still gonna be my go-to waffle recipe. Thanks!

    Had some Amylase enzyme that I use to bake your guys' Brioche recipe with, and said I can use 1g of that instead of the 50g of the malt powder. Gonna try it out today and see how they turn out

    I dont have diastatic malt powder in my country so I omitted it and added more sugar to the batter because i like it slightly sweeter. And I gotta say these waffles were a delight!❤

    Just made these!
    And yes this recipe yields very light and crispy waffles that thanks to the yeast still has some flavour.
    Very delicious. And you need to make them more or less as brown as shown in the video to have them be the perfect amount of crisp.
    I think these would be absolutely perfect for brunch. They were pretty easy and fast to make, waiting for the batter to rise is the only thing that takes time. And that passive time, were it just stand on the counter.
    I went for the full 2 hours, but I’m sure 1/4 of that time would be plenty delicious too.

      I tried it but the 50 g diastatic malt powder was overwhelming. Could it maybe be a typo? Did you actually use 50 g?

    Easily the best waffle I've ever had. I was blown away by how good these are.
    It took a while to get the right time/temperature/volume to achieve the right texture and doneness, but one I dialed it in to my specific waffle iron they are consistently prefect.
    Now, what else can I make with diastatic malt powder?

    i love your waffle recipe, this recipe definetely is pro.
    leftover batter can be refrigerated? ,
    once i mixed the dry and wet ingredient, can i put it directly into the fridge until the next morning?
    I am trying lots of recipe, but the above question always my problem.

    So I tried the recipe. I've got a basic Hamilton Beach waffle iron. First ones down didn't go so well because I was using the Ready light as my time base. Then I realized - wait for the steam to die down - the waffles come out perfectly crispy.

      Jonas Fox I used more sugar because Diatatic malt feeds the yeast just like sugar

      A little late of an answer but maybe someone else has the same problem.
      At least in Sweden our ecological(/organic) flours have a similar but smaller affect as adding diastatic malt powder, as it tends to contain more diastatic wheat malt than the non ecological kind.
      Also using some small millers that make some more high end maybe stone milled flour for pastery might be a good bet.
      A tip is to she knows home brewing supply stores, or where ever you think you could find stuff for brewing your own beer at home, as they might carry diastatic malt powder maybe.

      @@sarcasmo57 I did. Life has been a bumpy ride, with great things and bad things alike.
      It all startes by me using a dead batch of yeast, only achieving flat, hard waffles. This sorely disappointed me, and I had to go on antidepressives.
      After many fails and switching to harder drugs, I finally achieved the perfect yeasted waffle. This did not last long though, since my wafflemaker broke shortly after. This caused a deep depression and I had to commit myself to St. Annes for longterm treatment. I promised myself never to make another waffle again.
      Forward a year and I relapsed, hard! I had been up all night watching Joshua Weissmans sourdough videos, and got the amazing idea to make... yes you guessed it... sourdough waffles! These has been my saviour I even stopped doing heroin, because I am too busy keeping my sourdough starter alive ever since.
      All in all I rate the past 4 years a solid 5/7.

      thePowerPlant I thought exacly the same.. I like crispy pancakes and i use my grandmother recipe, where she leaves mass with jeast for minimum 1 hour.. But the real secret is to bland egg whites with little bit salt separetly and then add to rest - she says :)

    If you're gonna go through the trouble of making these, and waiting for the yeast to bloom etc, you might as well make your own whipped cream instead of the store bought stuff that's super airy and artificial. This looks like a really good recipe though. If you want a sweet and slightly tangy whipped cream, make a cream cheese whipped cream! It's ridiculous how good it is and it has great body and mouth feel. Here's the quick recipe :
    CREAM CHEESE WHIPPED CREAM yields about 2 1/4 cups
    4 oz(half pack) cream cheese, AT ROOM TEMPERATURE
    1/4 cup sugar
    1/2 tsp vanilla extract
    Pinch salt(1/8tsp)
    1cup heavy cream CHILLED
    *In a stand mixer(or hand mixer) with whisk attachment, whip cream cheese , vanilla,sugar and salt on medium high speed until light and fluffy, 1-2 minutes, scape bottom and sides of bowl as needed with spatula.
    *Reduce speed to low and add chilled heavy cream, in a slow steady stream. When almost fully combined, raise speed to medium high speed and whip for about 1 and a half to 2 minutes, medium to stiff peaks, or to your liking.
    This is great for icing or filling cakes, it's better than icing with regular whipped cream because it will hold better, without being too oozy and melty which can be messy and make your cake(or waffle) soggy.It has great body, enjoy!

      I haven't tried yet but will soon. Just bought the barley seeds.
      Only thing I'm wondering is diastatic malt powder has some dextrose and flour added to it but in what proportions? So if this recipe asks for 50g of DMP and we make this pure stuff should we add a bit less? Maybe 30 40g? I'm unsure of this part.

      They're using the Waring Pro WMK600. I have the WMK200 which is the exact same thing, and cheaper, but it only makes one at a time while the one in the video makes 2 at a time. They're really great in my opinion.

    I made this recipe today. I followed the recipe to the letter. I'm a baker so I know how important accuracy is when measuring. I switched my kitchen scale from ounces to grams so I got everything exact. I didn't substitute any of the ingredients. I made the batter, let it sit for a good 2 hours and it did foam and bubble up nicely. However, when I baked them in my Belgian waffle maker, they were flat and didn't rise. I've made many other waffle recipes in the same iron so I know it wasn't my machine. The batter came out so thin and runny. :(

    Can I use amylase instead of using malt powder?? If so, is there going to be any difference in crispness, browning, texture?

      Abdullah Alharbi I use amylase and the results are very good - waffles brown and crisp up quickly and are very soft and lacey on the inside. Just remember that it's super strong so use very small amounts, maybe less than one gram for this recipe. Didn't compare it to malt powder though.

    From a food safety point of view. To make it light and fluffy you need to leave the yeasted batter at room temperature for over an hour. However, if it has eggs in it is that safe?

    do i have to use diastatic malt powder? i really want to do this but i have no idea where i could get that from

      It says on their website that you don't have to use it, it just improves color and I believe it said crispiness as well, they have a link on their website on where you can buy the diastatic powder if you want to buy it! :)
